Looking for a new idea for lunch this week, you’ve hit the jackpot with these Dill Pickle Chicken Salad Croissants. Who wouldn’t love a buttery croissant stuffed with chicken salad that is loaded with crisp pickles? I can’t think of anyone either.
And, am I the only one always asking myself, “what can I make with canned chicken anyway?” Not that you have to use canned chicken for this recipe, any chicken will do, but canned makes this a quick option if you’re short on time. (And FYI, we all know Kirkland canned chicken is the best if you’re going to go that route.)

This lovely recipe came straight out of my friend Mary’s stunning new cookbook. I have been cooking from these pages ever since it arrived. Who else loves a cookbook with simple ingredients and that has a picture with every recipe? Me.
This is Mary’s second book. She’s kind of a big deal. If anyone remembers, I shared these Sweet Chipotle Chicken Bites from her last book and that recipe is still as good as it gets. I can’t tell you how often my boys requested it for dinner. I hope you’ve given it a try.
Here are some shots I took directly from the book and are on my list to make next. The only reason I haven’t gotten to them is because I’ve made this Dill Pickle Chicken Salad four times since this book arrived.

Dill Pickle Chicken Salad Ingredients
It’s amazing what a huge impact a few simple ingredients can have. Yes, I’m looking at you pickles. And quite honestly, chicken and pickles are a great flavor combo on their own.
- Mayonnaise – use a full-fat version for the best mouthfeel and flavor in every bite
- pickle juice – take this right from the pickle jar
- salt, pepper and granulated garlic – flavor boosters
- dried dill – adds extra dill flavor, feel free to substitute with fresh at 3/4 tablespoon
- cooked chicken – make it from scratch, use rotisserie chicken or canned, it’s up to you
- croissants – or feel free to use any bread you prefer
- green onion – adds flavor
- leaf lettuce – anything you prefer on a sandwich (optional)

How Are We Going To Serve This Dill Pickle Chicken Salad?
As a Sandwich
Sandwich style is the most obvious way to serve this pickle and chicken salad, and what is suggested in this recipe. This flavorful salad really does taste the best snuggled between two halves of a buttery croissant. However, feel free to use any bread or rolls you have sitting around. The bread portion is entirely up to you and your preferences.
In a Hollowed Out Avocado
This is a great option if you’re currently following a low carb diet. Scoop out a portion of the avocado and place the chicken salad inside. Top with the avocado you scooped out.
As a Wrap
Use any type of large-sized flour tortilla ~ regular, whole wheat or even the spinach-flavored ones. Add leaf lettuce, avocado slices and tomatoes if you choose.
This is another great low carb option. Use Bibb or iceberg lettuce if you prefer more crunch.
This will keep for three to five days in a tightly fitted container in the refrigerator.
I do not recommend freezing this recipes as mayonnaise ingredients will emulsify as they thaw, leaving you with a watery and very different texture chicken salad.

Dill Pickle Chicken Salad Croissant Sandwiches
- 1/2 cup mayonnaise
- 1 tbsp pickle juice
- 1/2 tsp freshly ground black pepper
- 1/4 tsp kosher salt
- 3/4 tsp dried dill
- 1/2 tsp granulated garlic or garlic powder
- 3 cups cooked chicken, chopped into 1/2" pieces, about 1/2 of a large rotisserie chicken. Canned chicken is also ok to use
- 3 large dill pickles, diced into tiny 1/8" pieces, about 1-1/2 cups
- 2 green onions, thinly sliced, about 1/4 cup
- 6 croissants or bread of your choice
- optional: green leaf lettuce, baby spinach or arugula
- In a medium bowl, combine mayonnaise, pickle juice, pepper, salt, dill and garlic. Add the chicken, pickles and onions. Stir well until all is combined. ( you can place in the fridge at this point or serve immediately.)
- Split croissants in half. Layer greens on one half of the croissant and scoop the chicken salad over the greens. Top with the second half of the croissant and serve.
- The chicken salad will keep in the refrigerator for several days.
