- 1/3 cup granulated or coconut sugar
- 1-1/2 tsps. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. table salt
Wet Ingredients:
- 2 medium ripe bananas, mashed
- 2 large eggs, slightly beaten
- 1/4 cup pure maple syrup
- 2 tbsps. vegetable oil
- 1 tsp. vanilla extract
Also:
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 °F. Line muffin tin with paper liners.
- In a large mixing bowl, combine dry ingredients until fully mixed.1-1/2 cups all-purpose flour, 1/3 cup granulated or coconut sugar, 1-1/2 tsps. ground cinnamon, 1 tsp. baking soda, 1/2 tsp. baking powder, 1/2 tsp. table salt
- In a medium-sized mixing bowl, combine wet ingredients until fully mixed.2 medium ripe bananas, mashed, 2 large eggs, slightly beaten, 1/4 cup pure maple syrup, 2 tbsps. vegetable oil, 1 tsp. vanilla extract
- Add wet ingredients to the bowl of dry ingredients and combine until fully incorporated. (Do not overmix.) Fold in chocolate chips.1/2 cup semi-sweet chocolate chips
- Fill muffin tins 3/4 of the way full.
- Bake for 18-22 minutes. Let muffins cool in the pan for 10 minutes before removing to a cooling rack.
