Strawberry Pizza
Putting together a strawberry pizza is really easy. I just make a sugar cookie crust, whip up a cream cheese filling, and then top it with sweet strawberries and this amazing glaze.
This dessert pizza is a fun and playful twist on a classic fruit tart and it’s always well-received for dessert.

Ingredients
Feel free to make and use your favorite cookie dough recipe if you choose. Using pre-made cookie dough is a real timesaver for this recipe.
- sugar cookie dough – Any brand of sugar cookie dough in a tube will work for this recipe. Be sure to set the tube of dough out 5-10 minutes ahead to allow time to soften so you can press the dough easily into a baking pan.
- fresh strawberries
- granulated sugar
- lemon juice
- cornstarch
- strawberry gelatin – The gelatin creates a thickness and jelly-like consistency.
- water
- kosher salt
- cream cheese
- confectioners’ sugar
- pure vanilla extract
- white chocolate chips – Feel free to use semi-sweet or dark chocolate chips if you prefer.

How To Make Strawberry Pizza
Find the complete recipe with measurements in the recipe card at the bottom of the post.
- Preheat your oven to 325 degrees F.
- Grab your sugar cookie dough and press it into a 9 x 13-inch rimmed baking sheet. Use a piece of wax paper to help press the dough evenly. Bake for 13-15 minutes until it’s just turning golden brown. Don’t overbake it! Let it cool on a rack for about 30 minutes or until it’s at room temperature.
- For the strawberry glaze, take your prepared strawberries and mash them in a small mixing bowl with a fork or potato masher. Move the mashed strawberries to a medium saucepan and add sugar, lemon juice, cornstarch, gelatin, water, and a pinch of salt. Bring it to a slow boil over medium heat, stirring continuously. Cook for about 5 minutes until the sauce thickens. Take it off the heat and pour it into a clean bowl to cool to room temperature—this will take about 30 minutes.
- While everything is cooling, make the filling. Use a hand mixer in a medium mixing bowl to blend softened cream cheese, confectioners’ sugar, lemon juice, and vanilla extract. Scrape down the sides with a rubber spatula to make sure everything is mixed well. Pop the cream cheese mixture into the fridge while you wait for the other ingredients to cool.
- Once the cookie crust and glaze are at room temperature, spread the cream cheese filling over the top of the cookie crust with an icing spatula or rubber spatula.
- Spread the cooled strawberry glaze over the cream cheese layer using a clean spatula. Arrange a layer of sliced strawberries in rows on top of the glaze. Finally, drizzle melted white chocolate (you can melt it in the microwave) across the sliced strawberries. Refrigerate for 20 minutes to let everything set.

Strawberry Pizza
Ingredients
Glaze
- 1 (16 oz) package of refrigerated sugar cookie dough, softened
- 1 cup fresh strawberries, hulled and quartered
- 1/4 cup granulated sugar
- 2 tsps fresh lemon juice
- 1-1/2 tsps cornstarch
- 2 tsps strawberry gelatin
- 3 tbsps bottled or filtered water
- 1/8 tsp kosher salt
Filling
- 1 (8 oz) block cream cheese, softened
- 1 cup confectioners' sugar
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
Topping:
- 2 cups sliced fresh strawberries
- 1/4 cup white chocolate chips melted
Instructions
- Preheat oven to 325 degrees F.

- To make strawberry pizza filling, use a hand mixer and medium-sized mixing bowl to blend softened cream cheese, confectioners' sugar, lemon juice, and vanilla extract. Use a rubber spatula to scrape down the side of the bowl to ensure all of the sugar has been incorporated into the cream cheese. Once blended, place the cream cheese mixture into the refrigerator while the other ingredients cool to room temperature.1 (8 oz) block cream cheese, softened, 1 cup confectioners' sugar, 1 tbsp fresh lemon juice, 1 tsp vanilla extract
- Once cookie crust and glaze have cooled to room temperature, use an icing spatula or rubber spatula to spread cream cheese filling over the top of the cookie surface.
- Then using a clean spatula, spread strawberry glaze over the cream cheese layer. Add a layer of sliced strawberries in rows across the surface of the strawberry glaze. Finally, drizzle melted white chocolate (melt in the microwave) across the sliced strawberries. Wow Cathy! A showstopper to be sure. But…I’m really intrigued by some of the ones on your “Adaptation” list – particularly the apples.
Would we do a citrus dunk like is usual for apples, or would you recommend sautéing them with perhaps butter and brown sugar to caramelize them a bit before topping the pizza?

I would chop into squares different varieties of apple (red and green) and dunk them in club soda for a few minutes to prevent browning. Dry them and add on top of cream cheese layer. Drizzle with caramel and your favorite chopped nuts.
