I am the biggest fan of fresh strawberry pie and my super-easy, no bake version is a must-make summer dessert.

Fresh Strawberry Pie
Who remembers fresh strawberry pie season at Marie Callender’s restaurants? My go-to order was always a slice of chocolate satin pie until their fresh strawberry pie came into season. Piled high with whipped cream, that slice of pie was a childhood favorite.
Once I realized how easy it is to make a glazed strawberry pie, I’ve always made it from scratch. It’s especially easy with an Oreo crust, making it a no-bake dessert, which is perfect for avoiding the heat of the oven in the summer.

- Is it even summer without strawberry pie? It’s perfect for Memorial Day, 4th of July or any day during strawberry season.
- It’s one of my favorite desserts to make after spending the day strawberry picking.

Ingredients
- Golden Oreo cookies: I love using Golden Oreo cookies for the crust because they add a sweet, buttery base that perfectly complements the strawberries.
- Butter: Melting the butter and mixing it with the crushed Oreos makes an easy crust, and it binds it together beautifully.
- Water: I’ve tested different amounts of water and have found adding just the right amount ensures the filling has the perfect consistency without being too runny.
- Granulated sugar: The granulated sugar sweetens the strawberry filling just enough without overpowering the natural fruit flavor. Especially important when strawberries are more tart than sweet.
- Cornstarch: My go-to thickener for the strawberry glaze, making it perfectly glossy and firm.
- Strawberry flavored JELL-O: Using strawberry flavored JELL-O intensifies the strawberry flavor and gives the pie that classic, vibrant color.
- Fresh strawberries: There’s nothing like the taste of fresh, juicy strawberries in this pie, especially when they’re in season.
- Heavy cream, sugar and vanilla extract: Topping the pie with freshly whipped cream made from heavy cream, sugar, and vanilla extract adds a rich, creamy finish that everyone loves. You can also use store-bought, but I prefer making my own.

How To Make No Bake Fresh Strawberry Pie

- Step One: I place the Oreo cookies in the bowl of a food processor and pulse them until they are fine crumbs. Alternatively, I can smash them in a sealed bag with a rolling pin if I don’t feel like getting the food processor out.
- Step Two: Next, I pour the melted butter into the food processor and pulse until fully combined. I can do the same in a mixing bowl, combining the crumbs and butter with a wooden spoon.
- Step Three: I press the crumbs into the bottom and up the sides of a sprayed 9-inch pie plate. Then, I let the crust set up in the freezer while I work on the filling.
- Step Four: I place the water, sugar, and cornstarch in a medium-sized saucepan and whisk them together. I will bring the mixture to a boil, stirring occasionally, until it thickens, which takes about 8 minutes. Then, I remove it from the heat.
- Step Five: I add the dry strawberry JELL-O to the saucepan and whisk until it’s fully combined. I allow the mixture to cool. Once the mixture has cooled, I fold in the fresh strawberries and pour the filling into the prepared pie crust. I chill the pie in the refrigerator until it’s set. To save time, I can also chill it in the freezer for about an hour.
- Step Six: When it’s time to serve, I pour the chilled cream, sugar, and vanilla into a large mixing bowl. I beat the mixture on medium-high speed for about 2 minutes, until it’s thick and spreadable. I will spoon or pipe the whipped cream onto the chilled pie filling, completing the pie.

Recipe Notes
- After pressing the Oreo crust into the pie plate, I sometimes freeze it for an extra 15 minutes to make sure it stays firm and doesn’t get soggy when the filling is added.
- Sometimes I sprinkle a thin layer of finely chopped nuts (thinly sliced almonds are my favorite choice) over the crust before adding the filling adds a delightful crunch and extra flavor.
- To achieve the perfect glaze consistency, I let the cornstarch mixture cool slightly before adding the JELL-O, which helps it set just right without clumping.
- Marinating the strawberries in a tablespoon of sugar and a splash of balsamic vinegar for 10 minutes before folding them into the filling brings out their natural sweetness and adds depth to the flavor. It tastes good.
- Adding a tablespoon of instant vanilla pudding mix to the whipping cream helps it hold its shape longer, especially on warm and humid days.
- Sometimes I add a few fresh mint leaves as a garnish on top of the whipped cream.
- Always keep this pie refrigerated.

Leftovers, Storage and Freezing
- When storing leftovers, I cover the pie loosely with cling wrap and it’s good for up to three days in the refrigerator.
- When it comes to freezing, I prefer to freeze individual slices on a baking sheet before transferring them to a freezer-safe container, making them easier to grab a slice whenever I want, without defrosting the whole pie.
- Store any extra whipped cream separately in a sealed container and re-whipping it briefly before serving keeps it fluffy and fresh tasting for a few days.

Fresh Strawberry Pie (No Bake)
Ingredients
Oreo Crust:
- 36 golden Oreo cookies
- 1/2 cup (8 tbsps.) butter, melted
Strawberry Filling:
- 1 cup water*
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 (3 oz.) package strawberry flavored JELL-O
- 3 quarts fresh strawberries, cleaned and destemmed (whole or halved)
Whipped Cream Topping:
- 1-1/2 cups heavy whipping cream (chilled)
- 2 tbsps. granulated sugar
- 1 tsp. vanilla extract
