Blue Cheese Onion Dip Recipe
This tantalizing dip is a cross between French onion soup and blue cheese dip all rolled into one amazing bite. Use thick-cut potato chips as a delivery vessel and it’s a flavor powerhouse.
This blue cheese dip is packed with flavor and completely addicting. Fair warning, you might not want to be home alone with a bowl of this dip.

What You’ll Need to Make This Recipe
It’s all about the onions and the blue cheese in this recipe.
- yellow onion – stick with these, they have the most sugar in them and thus caramelize the best and have the sweetest flavor.
- olive oil – don’t use too much as too much fat ends up sautéing the onions instead of caramelizing them.
- sugar, cayenne and salt
- blue cheese – get the best blue cheese you can since this is really the bones of the recipe
- plain lowfat or nonfat yogurt
- Worcestershire sauce – flavor booster
- mayonnaise – full fat
- fresh lemon juice
- scallions
- thick cut potato chips – for dipping

Onion Storage Tip
Prepping onions ahead of time is a great time saver. You do not want to caramelize early, but you can peel and dice them and keep them stored in a resealable container ( 1 or 2 cup portion sizes are best) in your freezer. When it’s time to make a recipe you can drop the frozen onions right into your pan for easy cooking.

If you’ve had trouble caramelizing onions in the past, the trick is to keep the pan covered. This keeps the moisture inside the onions so they don’t easily burn.

Blue Cheese Dip with Caramelized Onions
Ingredients
- 2 cups yellow onion, chopped
- 1 tbsp olive oil
- pinch of sugar
- pinch of salt
- 4 oz blue cheese, crumbled (about 2/3 cup)
- 2 tbsp Port
- 6 oz plain low-fat or nonfat yogurt
- 1/2 cup mayonnaise
- 1 tsp Worcestershire sauce
- juice of 1/2 a lemon
- 2 tbsps scallions, chopped
- salt and cayenne pepper to taste
Instructions
- Caramelize onion in olive oil with sugar and salt in a heavy skillet over medium low-heat. Stir occasionally to prevent scorching, but do not stir too often. They will brown better if left alone. After 5 minutes of cooking, cover the pan (the lid keeps moisture inside so the onions won't burn easily). Cook until brown and very soft, 20-25 minutes. Stir in the port, scraping up any brown residue left on the bottom of the pan; cool onions slightly.
- Blend cheese, yogurt, mayonnaise, Worcestershire and lemon juice in a bowl.
- Add cooled onions, scallions, salt and cayenne to taste; stir to blend. Cover and chill at least 2 hours but 24 hours is preferred. The dip really changes flavor over that time.Â
- Serve with potato chips.
