While I love scooping up this blue cheese dip with caramelized onions using thick-cut potato chips, it’s equally mouthwatering as a spread on my favorite burger.

Blue Cheese Onion Dip
If I had to describe this dip, I’d say it combines the flavors of French onion soup and blue cheese into one amazing bite. Thick-cut potato chips make the perfect delivery vessel. The taste is not only impressive but also complex, in a powerhouse kind of way.
It goes without saying, but you might not want to be left alone with a bowl of this dip. One bite easily turns into six with its addictive flavor. Fair warning!

Ingredients
It’s all about the onions and the blue cheese in this recipe.
- yellow onion – stick with these; they have the most sugar, caramelize the best, and have the sweetest flavor.
- olive oil – use sparingly; too much will sauté the onions instead of caramelizing them.
- sugar, cayenne and salt
- blue cheese – use the best quality you can find, as it’s the backbone of this recipe
- plain low-fat or nonfat Greek yogurt – I prefer Fage 2% for this recipe, as its mouthfeel and thickness are just right.
- Worcestershire sauce – flavor booster
- Port wine -adds so much complexity. See the recipe card if you are looking for a nonalcoholic substitute
- mayonnaise – full fat adds the right mouthfeel
- fresh lemon juice
- scallions

How to Make Blue Cheese Dip with Caramelized Onions

- Step One: Start by caramelizing the onions in olive oil with sugar and salt in a heavy skillet over medium-low heat. Stir occasionally to prevent burning, but try not to stir too frequently—letting them sit helps them brown nicely. After about 5 minutes, cover the pan to keep moisture in and prevent burning. Let them cook until they’re brown and super soft, which should take about 20-25 minutes. Once they’re done, stir in the port, scraping up any tasty bits stuck to the bottom of the pan. Let the onions cool a bit.
- Step Two: Next, in a bowl, mix together the cheese, yogurt, mayonnaise, Worcestershire sauce, and fresh lemon juice until smooth and creamy.
- Step Three: Now, add the cooled caramelized onions, scallions, and season with salt and cayenne pepper to taste. Give it a good stir to blend everything together. Cover the bowl and chill the dip for at least 2 hours—overnight is even better. Trust me, the flavors really develop beautifully over time.
- Step Four: When you’re ready to serve, enjoy this dip with potato chips or spread it generously on your favorite burger.

Recipe Tips
- If you’ve had trouble caramelizing onions in the past, the trick is to keep the pan covered. This keeps the moisture inside the onions so they don’t easily burn.
- Prepping onions ahead of time is a great time saver. You do not want to caramelize early, but you can peel and dice them and keep them stored in a resealable container ( 1 or 2 cup portion sizes are best) in your freezer. When it’s time to make a recipe you can drop the frozen onions right into your pan for easy cooking.
- If blue cheese is not your favorite, you can leave it out and enjoy this recipe as a French onion dip. It’s still good!
- This dip will keep in the refrigerator for 4-5 days, so make sure to cover it tightly.

Blue Cheese Dip with Caramelized Onions
Ingredients

- 4 oz blue cheese, crumbled (about 2/3 cup)
- 6 oz plain low-fat Greek or nonfat Greek yogurt (my preference is Fage 2%)
- 1/2 cup mayonnaise
- 1 tsp Worcestershire sauce
- juice of 1/2 a lemon
- 2 tbsps scallions, chopped
- salt and cayenne pepper to taste
Instructions
- Caramelize onion in olive oil with sugar and salt in a heavy skillet over medium low-heat. Stir occasionally to prevent scorching, but do not stir too often. They will brown better if left alone. After 5 minutes of cooking, cover the pan (the lid keeps moisture inside so the onions won't burn easily). Cook until brown and very soft, 20-25 minutes. Stir in the port, scraping up any brown residue left on the bottom of the pan; cool onions slightly.2 cups yellow onion, chopped, 1 tbsp olive oil, pinch of sugar, pinch of salt, 2 tbsp Port
- Blend cheese, yogurt, mayonnaise, Worcestershire and lemon juice in a bowl.4 oz blue cheese, crumbled (about 2/3 cup), 6 oz plain low-fat Greek or nonfat Greek yogurt, 1/2 cup mayonnaise, 1 tsp Worcestershire sauce, juice of 1/2 a lemon
- Add cooled onions, scallions, salt and cayenne to taste; stir to blend. Cover and chill at least 2 hours, but 24 hours is preferred. The dip really changes flavor over that time.2 tbsps scallions, chopped, salt and cayenne pepper to taste
- Serve with potato chips or spread it on your favorite burger.
