Stir in 3/4 cup of coarsely chopped pecans with a spoon until they’re fully mixed in. - Step Four (Shape the Bites):

Roll each ball in confectioners’ sugar and set them on a tray. Ready to go.

- 3/4 cup pecans coarsely chopped
- 1/2 cup confectioners' sugar
Instructions

There are gluten free vanilla wafers out there so I would start with those. Maybe gluten free animals crackers would work, but they are less sweet, which will make them taste different. You could try adding vanilla bean paste in with those since that would add sweetness.
