How I’m Really Using That Bottle of Limoncello in the Freezer
I keep a bottle of limoncello shoved in the freezer, and it rarely sees the light of day until the weather turns hot. That’s when I start making limoncello lemonade. It’s lemon on lemon with just enough mint to keep it from going overboard, and the Pellegrino finish makes it smoother than club soda ever could.
There’s nothing really complicated here. I muddle the mint, pour in the limoncello, top it with bubbles and ice, and what I’ve got looks like a sparkling limoncello cocktail you’d swear came from an Italian patio instead of my kitchen.
And while it’s perfect for sitting in the sun, I also like it before dinner when I want something light with a spritzy feel. You can batch a pitcher if friends are around, and it will like you planned ahead when really it’s just frozen lemonade concentrate and that bottle hiding in the freezer.
Why Keep Limoncello Lemonade In Play
- You can pour it strong or keep it light. Nobody complains either way.
- It takes an ordinary night straight into “where’s the playlist?” territory.
- It lands somewhere between cocktail and refresher, which means it works for any occasion.
- The lemon punch has people thinking you were zesting citrus all afternoon, even though there’s not a shred of zest in sight.

Ingredients
Nothing complicated, just the things that make this limoncello lemonade taste the way it should.
- Frozen lemonade concentrate — the shortcut that keeps it easy.
- Fresh mint — muddle a little and it cools the whole drink down.
- Fresh lemon juice — adds balance to all that lemon-on-lemon. The same layered flavor shows up in my limoncello syrup lemon Bundt cake, which takes things citrus in a sweeter direction.
- Pellegrino or club soda — Pellegrino is smoother, but whatever’s in the fridge works.
- Limoncello — straight from the freezer bottle.
- Ice — crushed, cubed, whatever you’ve got.
- Lemon slices and extra mint — the garnish that makes it look pulled together.

How to Make Limoncello Lemonade

- Step One (muddle the base)
Grab a small pitcher or big measuring cup and toss in the thawed lemonade concentrate, fresh lemon juice, and mint leaves. Muddle it until the mint looks bruised and everything smells like straight summer. - Step Two (build the glasses)
Split that mixture between four glasses. Don’t overthink it, just eyeball so everyone gets a fair pour. - Step Three (add the limoncello and bubbles)
Pour in 1/2 cup (120 ml) limoncello and 1/4 cup (60 ml) Pellegrino to each glass. The limoncello brings the punch, and the Pellegrino keeps it smooth. - Step Four (finish it off)
Top with crushed ice, add a lemon slice and a sprig of mint, and serve it right away while the bubbles are still kicking.

Recipe Tips
A couple small details make this drink just right:
- Chill everything first. Cold bottles mean the ice doesn’t have to do all the work.
- Muddle, don’t mash. Press the mint just enough to release the flavor without turning it bitter.
- Pitcher trick. Double or triple it in a pitcher when people are around so you’re not stuck pouring glass by glass. If dessert’s on the table too, lemon tiramisu keeps the citrus theme running.
- Club soda backup. Pellegrino is smoother, but club soda gets the job done if that’s what’s around.
- Garnish matters. A slice of lemon and a sprig of mint make this cocktail look like you actually planned ahead.

- Can I use fresh lemon juice instead of frozen lemonade concentrate?
Not really. The concentrate pulls double duty: lemon flavor and sweetness. If you only use fresh juice, it comes out too tart unless you stir in simple syrup. - Does the limoncello have to be ice-cold?
It helps. Straight from the freezer keeps the drink chilled and smooth. Room temp still works, but it melts the ice too fast. - Can I batch this ahead in a pitcher?
Yes, but hold the bubbles. Mix everything else, stash it in the fridge, and top with Pellegrino right before serving so it doesn’t go flat. - What if I only have club soda?
Use it. Pellegrino is smoother, but club soda still gives fizz. Nobody’s turning down a glass. - Is there a non-alcoholic swap for limoncello?
You could use lemonade with a splash of sparkling water and extra mint. It won’t taste the same, but it keeps the vibe if you need zero-proof. - How strong is this supposed to be?
As strong as you pour it. That’s the beauty of limoncello lemonade, it’s light and fizzy before dinner, or stronger when you’re ready for the playlist.

Equipment

Ingredients
- ½ cup (120g) frozen lemonade concentrate thawed
- 2 tbsps (30 ml) fresh lemon juice
- ¼ cup (15 g) fresh mint leaves
- 2 cups (480 ml) limoncello divided
- 1 cup (240 ml) San Pellegrino sparkling mineral water or club soda, divided
- ice cubes or crushed ice for serving
- lemon slices and extra mint leaves for garnish
Instructions
- Add the thawed frozen lemonade concentrate, fresh lemon juice, and mint leaves to a glass measuring cup or small pitcher. Muddle together with a muddler or the back of a wooden spoon.½ cup (120g) frozen lemonade concentrate, 2 tbsps (30 ml) fresh lemon juice, ¼ cup (15 g) fresh mint leaves
- Divide the mixture evenly among four glasses.
- To each glass, add 1/2 cup (120 ml) limoncello and 1/4 cup (60 ml) Pellegrino or club soda.2 cups (480 ml) limoncello, 1 cup (240 ml) San Pellegrino sparkling mineral water

Notes
- Frozen lemonade concentrate works best since it adds both sweetness and lemon flavor.
- Limoncello poured straight from the freezer blends smoother and keeps the drink colder.
- Club soda can be used if Pellegrino isn’t available, though the finish will be a little sharper.
- For a non-alcoholic version, use lemonade with extra sparkling water and mint.

Limoncello! Thanks for that beautiful lemon drink recipe. I had already checked out to see if our local spirit store had lemoncello, because Danny Divito came out with his own version of it. Well, at least I know I can get that without any problem. My problem is the produce here in our small town. We do have Wal Mart, but their produce lacks a lot of what you would need to make a beautiful presentation as you did. For one thing, the mint is always old and starting to dry up. The lemons they stock are full of seeds. They used to carry a bag of California lemons, but now they get them in bulk from Mexico and they are very bad quality. So I will have to go elsewhere to get what I need to make that cool refreshing and beautiful drink. Thanks again for that recipe. I am going to try it. I used country fresh lemonade, add strawberry puree (to make strawberry lemonade). Then muddle mint with ice. Pour in 1 1/2 oz of Coconut Rum (Malibu) and fill the glass with strawberry lemonade. It was so popular and became permanent item on drink menu. Great summer drink. Just sharing
