Okay, here is my pick for Super Bowl wings this year. This recipe intrigued me for several reasons.
I loved the idea of combining pineapple juice and soy sauce as a marinade and then sprinkling the chicken with lemon gelatin seemed like a fantastic idea. Adding the poppy seeds for a finishing, textural touch was also something different and intriguing.
The final result was very yummy! And who needs beer on Super Bowl Sunday as these wings are rockin’ when paired with our Noble Pig Pinot Gris. The crisp, citrusy flavors of our Pinot Gris play nicely with this dish. Very nicely.
Preheat the oven to 350o. In a large bowl, combine the pineapple juice and soy sauce. Add the wings and let marinate for 15 minutes.
On a foil-lined rimmed baking sheet, arrange the wings in a single layer. Pour 1/2 cup of the marinade over the wings, then sprinkle with half of the gelatin; bake for 30 minutes.
Flip and sprinkle with the remaining gelatin and the poppy seeds, then bake until browned, about 30 minutes.

1 cup pineapple juice
1 cup soy sauce
3 pounds chicken wings and/or drummettes
1-1/2 ounces lemon-flavored gelatin
2 Tablespoons poppy seeds
