If this is white bean dip, then why is it green? I’ll get to that.
But I would like to say…This. Is. The. Best. White. Bean. Dip. I. Have. Ever. Had. I know that’s weird to say about bean dip but seriously, it is the best.
I think it’s the combination of flavors here, which are some of my favorite…garlic, rosemary and Parmesan really give flavor to the lowly Cannellini bean. Who knew it could be elevated to such status.
And it only takes 5 minutes to make. Another plus.
And the color? It’s the addition of green onion and rosemary giving this white bean spread its green visage.

Let’s make this together…
Here’s all you need: Cannellini beans (or Great Northern Beans), extra-virgin olive oil, green onions, fresh rosemary, Parmesan cheese and garlic. Ingredients not shown: Salt.
In the bowl of a food processor add one 15-ounce can Cannellini beans, 1/4 cup chopped green onions, 1/4 cup shredded Parmesan cheese, 1/4 cup extra-virgin olive oil, 1 Tablespoon fresh rosemary leaves, 2 cloves of minced garlic and 3/4 teaspoon salt.
Pulse it in the food processor, about 30 seconds, until mixture is almost smooth.
Spoon the dip into a serving dish and drizzle olive oil over the top. Garnish with green onion and rosemary if desired.
Find as many cute little dishes as you can to serve this dip.
Serve with bagel chips and rustic bread slices. It’s so, so good.
