Upside Down Apple Pie – No Pie Skills Necessary
If pie crust stresses you out, this upside down apple pie keeps things simple. Refrigerated dough works perfectly here and bakes up golden in all the brown sugar, butter, and pecans. The crust turns crisp on top and soft underneath, soaking up the caramel as it cools. Homemade crust has its place, but not in this one.
If you like desserts that flip the script on old American favorites, my Boston cream pie cupcakes do the same thing – all the flavor of the original, just handheld and easier to make.

- Butter – melts into the brown sugar for that caramel base.
- Light brown sugar – deeper sweetness than regular sugar.
- Pecans – add crunch and turn candy-like after baking.
- Refrigerated pie dough – shortcut crust that works every time.
- Apple pie spice – instant fall flavor.
- All-purpose flour – thickens the syrup around the apples.
- Granulated sugar – keeps the filling bright and balanced.
- Granny Smith apples – tart, firm, and made for pie.

How To Make Upside-Down Apple Pie

- Step One (prep the pan)
Spray your pie plate with nonstick spray, line it with parchment, and spray the parchment too. You’ll thank yourself later when it’s time to flip. - Step Two (make the caramel base)
Mix 4 tablespoons of melted butter with brown sugar and pecans. Spread that across the parchment. It’s going to turn into a sticky caramel layer once the pie comes out of the oven. - Step Three (add the first crust)
Lay one crust over the pecan mix and press it in so it sticks. That bottom crust is going to pick up every bit of that buttery brown sugar. - Step Four (make the filling)
In a big bowl, mix the sugar, flour, cinnamon, apple pie spice, and the rest of the melted butter. Toss the apples in until they’re coated and glossy, then pour them into the crust. - Step Five (seal it up)
Top with the second crust. Trim and fold the edges together, then cut a few slits for steam. If you’re using a deep-dish plate, press the edges tight so it doesn’t separate. - Step Six (bake)
Bake at 375°F (190°C) for about an hour to an hour and fifteen. The crust should be golden and you’ll see syrup bubbling at the edges. I always set a baking sheet underneath to catch whatever tries to escape. - Step Seven (flip it)
Let it sit for about five minutes. Set a plate larger than the pie on top, grab some oven mitts, and flip it over in one motion. Peel off the parchment and take a second to admire that caramel top. - Step Eight (serve)
Let it rest a little longer before slicing. It’s good warm when the caramel’s gooey, or later when it firms up and turns chewy.

Recipe Tips
A few things that make this upside down apple pie come together the way it should.
- Keep the crust chill. You’re flipping it, so perfection doesn’t matter.
- Deep-dish plates need a little more care sealing the edges, but regular pie plates give you a better crisp.
- This version skips the stress of classic apple pie but keeps all the flavor.
- The filling’s the star – gooey, spiced, and just sticky enough to make the crust worth it.
- Makes a great Thanksgiving sub when you’ve got zero time for homemade dough.
- Edges bake up extra crunchy, which is part of the charm. Don’t overthink it.

Storage and Freezing
Where this pie lives after the flip.
- Keep leftovers covered in the fridge for up to 4 days.
- Warm slices in a 350°F (175°C) oven for about 10 minutes to bring the crust back to life.
- You can freeze the whole pie or single slices. Wrap tightly in plastic, then foil, and freeze for up to 3 months.
- Thaw overnight in the fridge and reheat to get that caramel glaze soft again.
- Frozen slices resurrected in the microwave make great late-night desserts – no judgment.

Upside-Down Apple Pie
Equipment
- 9" pie plate or deep dish pie plate
- parchment-round So it doesn't stick to the pie pan.

Ingredients
- cooking spray
- 6 tbsps butter melted and divided
- 1/2 cup light brown sugar
- 1/2 cup chopped pecans
- 2 refrigerated pie crusts divided
- 1 cup granulated sugar
- 1/3 cup all-purpose flour
- 3/4 tsp ground cinnamon
- 1/4 tsp apple pie spice
- 5 large Granny Smith apples, peeled cored and cut into 1/2" slices
Instructions
- Coat a deep-dish or regular-sized pie plate with nonstick cooking spray and line it with parchment paper, spraying the top of the paper as well. If you’re using a deep-dish plate, there won’t be much overhang for sealing the two crusts together, but it still works. A regular pie plate gives a crustier edge—both options work well.cooking spray
- In a small bowl, combine 4 tablespoons of melted butter, brown sugar, and pecans. Mix well, then spread evenly over the bottom of the pie plate on top of the parchment. Place one of the crusts in the pie plate, pressing it firmly against the nut mixture and up the sides of the plate. - In a large bowl, combine the granulated sugar, flour, cinnamon, apple pie spice, and the remaining 2 tablespoons of melted butter. Mix well, then add the apples and toss gently to coat. Spoon the mixture into the pie crust.1 cup granulated sugar, 1/3 cup all-purpose flour, 3/4 tsp ground cinnamon, 1/4 tsp apple pie spice, 5 large Granny Smith apples, peeled cored and cut into 1/2" slices
- Place the second crust over the apple mixture, trimming and folding the edges together to seal. Cut a few slits in the top for venting. If you’re using a deep-dish pie plate, seal the edges as best as you can.
- Bake in a 375°F oven for 1 to 1¼ hours, or until the crust is golden brown. (Mine took 1¼ hours in the bottom third of the oven.) Place a cookie sheet on the bottom oven rack to catch any drips from the pie.
- Let the pie cool for 5 minutes, then place a plate larger than the pie on top and carefully flip it over. Use oven gloves, as it will still be hot. Remove the pie plate and gently lift off the parchment paper. Allow to cool, and serve warm or at room temperature.

I am one who is pie crust challenged. This recipe sounds like something I can handle, and I will certainly try it. Thanks for posting this recipe. I just made the pie for my brother-in-law for Father’s Day tomorrow. It was super-easy, and the neuropathy in my hands is happy that I didn’t have to knead or roll out pie dough. My caramel glaze didn’t cook completely in some spots, but I suspect that had something to do with the extra pecans I used and the unreliable temperature of my oven (the damn thing fluctuates between 325F and 450F when I try to set it for 375F.

For the apple pie filling I use tapioca instead of flour, 2 T tapioca, 1/2 t cinnamon, 1/4 t nutmeg, 2 T lemon juice, 1T orange juice, 1 T vanilla, 1/3 c sugar, 3 T butter, pinch of salt. I also use at least 8 peeled, cored & sliced Granny Smith apples. I prefer deep dish frozen pie crusts for the dough. You don’t slit the top crust coz this will be the bottom of the pie after baking. I cover the pie with tin foil & bake for 25 minutes at 350 degrees then remove the foil & let the pie brown for 10 minutes. After removing from oven & cooled a bit
I put the tin pie pan that the frozen crust came in on top of the baked pie and flip it over, take away the baking dish & carefully remove the parchment paper from the sticky bun topping.
