My kids have been kicking my butt lately when it comes to chauffeuring them around. How is it that two teenagers have so many places to go….like, every day? I hate to break it to you mom’s of toddlers and such…but it only gets busier! Be prepared and know how to make really quick meals you can throw together between the 47 rides you are going to give in one day. No joke.
And, by choice we live about 10 miles out of town. We did know there would be a lot of extra driving, but seriously not this much. There are just so many practices and practices of speech and sports and parties and get-togethers…it’s like whoa.
And because of that, I need some seriously quick meals I can throw together, that are ready in 30 minutes and can often be eaten on the go…no cutting with a knife necessary.
Luckily, my kids like peas (they were a staple in the highchair) and Kielbasa (we’re Polish). They go together well in this little ensemble and it provides enough fuel to get through a sports practice or where ever else they are headed.
I love that while this is cooking in a covered skillet, I can get other things done. Not too much management is needed, which is always a plus on a busy weeknight. This meal can also be easily scooped into on-the-go containers and eaten on the road. Yes, sometimes we have to do that.
Quick Skillet Kielbasa Meal
- 3/4 cup water
- 1 can (10.5 oz) cream of celery soup
- 1 Tablespoon butter
- 1 lb Polska Kielbasa, sliced into pieces
- 3/4 cup uncooked basmati rice
- 10 oz frozen peas
- 1 can (6.5 oz) sliced mushrooms, drained
- 1 cup finely shredded extra sharp cheddar cheese
- In a large 12"-nonstick skillet, bring water, soup and butter to a boil . Add Kielbasa and rice, stirring to combine. Cover and cook over low heat for 20 minutes. Stir in frozen peas and mushrooms; cover and continue to cook for 15 minutes more. Remove from heat, sprinkle with cheese and cover until it's melted. Serve immediately.
