Get ready for these. These firecracker cupcakes are exactly what they look like—homemade funfetti, topped with whipped cream, fresh berries, and a load of Pop Rocks right before serving. That last part always gets a pause, then a smile.
First you get the cake, then the crackling starts. It’s loud (or it sounds loud in your mouth). It’s instant. And it catches people off guard in the best way.
I make these every Fourth of July, but they’ve made their way into birthday parties and backyard dinners too. They’re easy to pull off and hard to forget.
The Pop Rocks Difference
You’re going to like my homemade funfetti recipe. It’s solid, and turning them into firecracker cupcakes with Pop Rocks and red-and-blue berries for the 4th was just a fun way to finish them.
The crackling is subtle. It’s not over the top—it’s just enough to surprise you. That’s what makes these a good fit for the Fourth of July, or any gathering where you want to serve something that feels a little different.
This recipe starts with a great cupcake and gives it a twist that’s worth remembering.

About Pop Rocks
In case you’re not familiar, Pop Rocks are a carbonated candy that fizzes and pops when it hits moisture—like the inside of your mouth. That little crackle comes from pressurized carbon dioxide trapped inside the candy.
They’ve been around since the ‘70s, and if you’ve ever had them, you know the sound. That’s what makes them so fun to use here. You’re not just adding candy—you’re adding a full-on sensory moment.
What You’ll Need to Make These Firecracker Cupcakes
This is a pretty simple list—most of it’s pantry basics if you bake semi-regularly. The only thing you might need to plan for is grabbing the Pop Rocks and berries a day or two before you serve them.
- All-purpose flour – Standard for cupcakes.
- Baking powder – Gives them that nice lift.
- Table salt – Just a little to balance the sweetness.
- Unsalted butter – Softened so it creams properly.
- Granulated sugar – For sweetness and structure.
- Egg yolks – Eight of them. That’s what gives this recipe its rich texture and color.
- Vanilla extract – Brings out that classic cupcake flavor.
- Whole milk – Keeps the cupcakes moist and tender.
- Rainbow jimmies – The long waxy sprinkles that melt into the batter.
- Heavy cream – Whips up into a light topping.
- Confectioners’ sugar – Sweetens the whipped cream without adding grit.
- Fresh blueberries and raspberries – For the red, white, and blue finish.
- Pop Rocks – The fun part. I try to get red and blue for the full firecracker effect.

Baking the Firecracker Cupcakes

- Step One (mix the dry stuff)
Sift together the flour, baking powder, and salt in a medium bowl. Set it aside. - Step Two (cream the butter and sugar)
In a large bowl, beat the softened butter and sugar with an electric mixer until it looks pale and fluffy. This takes about 3 minutes. - Step Three (beat the yolks)
In another bowl, use clean beaters to whip the egg yolks and vanilla until they’re thick and light in color—about 4 minutes. Stir that into the butter-sugar mix. - Step Four (bring it all together)
Add the dry ingredients and milk in turns: start with a third of the flour mix, then half the milk, another third of the flour, the rest of the milk, and finally the rest of the flour. Mix after each addition. - Step Five (fold in the fun)
Scrape down the bowl with a spatula and gently fold in the rainbow jimmies. - Step Six (bake and cool)
Divide the batter into the lined muffin tin and bake at 350°F (175°C) for 22–25 minutes, or until a skewer comes out clean. Let the cupcakes cool completely on a rack. - Step Seven (make the whipped cream)
Just before serving, beat the heavy cream, confectioners’ sugar, and vanilla in a large bowl until it’s thick and holds soft peaks. - Step Eight (top and finish)
Dollop or pipe whipped cream onto each cupcake. Add a few fresh blueberries and raspberries. - Step Nine (add the Pop Rocks)
Right before serving, sprinkle each cupcake with Pop Rocks. You can also hand out individual packets so everyone can add their own.

How to Make Pop Rocks Cupcakes Work
A few things to keep in mind that’ll make these turn out exactly how they should.
- Separate your eggs while they’re cold—it’s way easier that way.
- You’ll only need the yolks for this recipe. Save the whites for something else—like my fluffy angel food cupcakes or chocolate blackberry pavlovas.
- Use jimmies, not nonpareils. The long waxy sprinkles melt into the batter without bleeding or turning gritty.
- Don’t frost these ahead of time. The whipped cream is best made right before serving.
- Pop Rocks and moisture don’t get along. Add them at the last minute, or serve each cupcake with a packet so people can top their own.
- If you want to swap the whipped cream for frosting, you can—but I like how light the cream is with the Pop Rocks.

Serving and Storing These Patriotic Cupcakes
These are easy to prep ahead—just hold off on the toppings until right before serving.
- Bake the cupcakes a day in advance and keep them covered at room temperature.
- Wait to add the whipped cream and fruit until you’re ready to serve.
- If already topped, store any leftovers in the fridge.
- Freeze the plain cupcakes (without toppings), tightly wrapped, for up to a month. Thaw before adding the whipped cream, berries, and Pop Rocks.

Frequently Asked Questions
- Can I use canned frosting instead of whipped cream?
Yes, you can. I like whipped cream for how light it keeps these, but buttercream or even canned frosting works too. Just remember—the Pop Rocks still need to go on last. - Do Pop Rocks really work on cupcakes?
They do, as long as they’re added right before serving. Moisture makes them start crackling early, so wait until the last minute or serve each cupcake with its own packet. - Where do I buy Pop Rocks?
Find them in the candy aisle of most grocery stores, party supply shops, or online. I usually pick up a few extra packs so I have enough for topping and serving. - Do Pop Rocks lose their fizz?
Yes. Moisture or age reduces their popping power. Keep them sealed until you’re ready to use them. - Can I make these patriotic cupcakes ahead of time?
You can bake the funfetti cupcakes the day before and keep them at room temp. Just hold off on adding the whipped cream, berries, and Pop Rocks until you’re ready to serve. - What kind of sprinkles should I use for homemade funfetti cupcakes?
Stick with rainbow jimmies. Jimmies are the long, thin and waxy form of the rainbow sprinkle. You often see them labeled as “decorettes.” These jimmies melt perfectly into the batter and create the best rainbow effect for any funfetti recipe. Nonpareils, on the other hand, tend to bleed and can mess with the texture. Firecracker Cupcakes (with Pop Rocks and Whipped Cream)

Ingredients
Funfetti Cupcakes:
- 2½ cups (312 g) all-purpose flour
- 2¼ tsps. (9 g) baking powder
- ¼ tsp (1 g) table salt
- 12 tbsps. (170 g) unsalted butter softened
- 1¼ cups (250 g) granulated sugar
- 8 large egg yolks
- 1 tsp (5 ml) vanilla extract
- 1 cup (240 ml) whole milk
- ½ cup (80 g) "jimmy" rainbow sprinkles
Whipped Cream:
- 2 cups (480 ml) heavy cream
- ½ cup (60 g) confectioners' sugar
- 1 tsp (5 ml) vanilla extract
Assembly:
- ¾ cup (115 g) fresh blueberries
- ¾ cup (95 g) fresh raspberries
- 6-12 packets Pop Rocks* ( red or blue if available)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper cupcake liners.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.2½ cups (312 g) all-purpose flour, 2¼ tsps. (9 g) baking powder, ¼ tsp (1 g) table salt
- In a large bowl, use an electric mixer to cream the softened butter and granulated sugar until fluffy and pale, about 3 minutes.12 tbsps. (170 g) unsalted butter, 1¼ cups (250 g) granulated sugar
- In a separate bowl with clean beaters, beat the egg yolks and vanilla extract until thick and light in color, about 4 minutes.8 large egg yolks, 1 tsp (5 ml) vanilla extract
- Add the egg yolk mixture to the butter-sugar mixture and mix to combine.
- With the mixer on low, add one-third of the dry ingredients, then half the milk. Repeat with another third of the flour, the remaining milk, and the last of the flour. Mix until just combined.1 cup (240 ml) whole milk
- Scrape the sides and bottom of the bowl with a spatula, then gently fold in the rainbow jimmies.½ cup (80 g) "jimmy" rainbow sprinkles
- Divide the batter evenly into the muffin cups and bake for 22–25 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan briefly, then transfer to a wire rack to cool completely.
- Just before serving, combine the heavy cream, confectioners’ sugar, and vanilla in a large bowl. Beat with an electric mixer until thick and soft peaks form.2 cups (480 ml) heavy cream, ½ cup (60 g) confectioners' sugar, 1 tsp (5 ml) vanilla extract
- Pipe or spoon whipped cream onto each cupcake, then top with blueberries and raspberries.¾ cup (115 g) fresh blueberries, ¾ cup (95 g) fresh raspberries
- Sprinkle generously with Pop Rocks just before serving, or serve with individual packets so guests can add their own.6-12 packets Pop Rocks*

- *Consider buying a pack of Pop Rocks for each cupcake and handing them out at serving time. Do not add the Pop Rocks early to prevent them from dissolving.
- Only the egg yolks are used in this recipe—save the whites for something else like angel food cupcakes or pavlovas.

We do have Pop Rocks in Australia, as Christie @ FigCherry wrote.. but Christie, it’s not FizzWhiz! Fizz is a sherbert thing, whereas there IS a PopRocks equivalent – it’s “Popping Candy” or something like that, in the lolly aisle, with the lollypops. The lollypop is a dipper shaped like a foot,that you dip into the rocks.
