Try White wine vinegar, it’s a suitable substitute for rice vinegar. Rice vinegar does have a sweeter taste, so adding a quarter teaspoon of sugar per tablespoon of vinegar may be necessary. You will have to taste and decide what to do. Bottled cherries…I’ve never used those and have no idea how it will change the flavor so it’s up to you. Both substitutes and/or additions can really change the taste of this recipe so it’s hard for me to know how it will end up. Let us know how it goes.
