Cranberry-Apple Cobblers
The abundance of apples this time of year takes dessert to a whole new level. The possibilities are endless and a welcome change from fruits of summer.
I love apple pie but it's fun to change it up a bit. These Cranberry-Apple Cobblers are a festive, fuss-free ending to a special meal. I love how the bursting cranberries ooze over the sides of the dish.
For those of you who have an aversion to pumpkin desserts, this would be a great ending to your Thanksgiving meal. It's sweet and tart with a great variance in texture. If you don't believe me you'll have to try it yourself.
This is also my entry into World Food Day hosted by Val over at More Than Burnt Toast. The objectives of World Food Day are to heighten our awareness to world hunger and bring to our attention what we can do about it personally. We're going to need dessert at this event, so here it is Val!

Let's make it now...
Here's what you'll need to whip these up: Apples, an orange, fresh cranberries, walnuts, butter, all-purpose flour, eggs, vanilla extract, golden raisins, salt and powdered sugar.
In a large bowl, toss together sliced apples, 1 cup fresh cranberries, 1/2 cup of the granulated sugar, 1/4 cup chopped walnuts and 1/4 cup golden raisins.
Butter four 5-inch quiche dishes or individual pie pans. Spoon apple mixture evenly into prepared dishes.
In another bowl, combine 2 eggs, 3/4 cup all-purpose flour, butter, the remaining 1/2 cup granulated sugar, 2 teaspoons orange zest, 1/2 teaspoon vanilla extract and 1/8 teaspoon salt. Stir with a fork until smooth.
Spread the topping evenly over the fruit mixture.
Bake about 30 minutes in a 350 degree oven or until topping is golden and fruit is tender. Cool slightly on a wire rack. Sift powdered sugar over the tops. Serve warm.
Enjoy with your coffee.

These apple cranberry desserts look delicious and easy to prepare! We just had baked Granny Smith apples for dessert last evening, and while those were very tasty, they were missing something and I think it is the batter topping that this dessert provides. I wish this entry had been a day earlier! But we will be using this recipe next time we have apples and cranberries on hand. More Halloween? You are something else with all these cute decorations. Do you have Halloween string lights outside your home too? I bet you do.

I always have an abundance of Thanksgiving desserts. I figure that just because I love pumpkin pie doesn't mean everyone else does. And I want them not to. You guys can love the cake, I'll keep the pumpkin pie!

There is NOTHING in that dish that I don't like. And, because it's full of fruits and fabulous fiber, I would totally convince myself that it's healthfood (isn't it?).
PS - I channeled you last night, did you get a shiver? I went to pick up cat food and came back with $80 of MORE Hallowe'en decorations for an already decked out house. Gotta love this time of year.....

This dessert looks absolutely divine, but my family would string me up if I served anything other than my pumpkin pie. I think it would make a lovely Christmas dessert though.

These individual cobblers are a terrific idea---very useful. Between you and RecipeGirl, with your apple/cranberry combinations, I'm in heaven.

I want to go to your house for dinner every day, especially during fall.
