It’s hard to believe we are dancing on the edge of summer. The sun is already waking up later and later and going to bed a little bit earlier every night. I know many of your kids have already returned to the classroom, but here in Oregon we still have until after Labor Day before we go back. I do love the month of August so I am fine that we don’t start back too early.
Now, let’s talk about back to school lunch. I still love packing a lunch for my boys, even though they are sixteen and eighteen years old. However, my eighteen year old son is off to college this fall so I will no longer be tasked with putting together a lunchtime meal for him. And you know what? I’m totally sad about it. Last May, the end of his senior year, I put a note is his lunch bag indicating this was going to be the last school lunch I ever packed for him. I know some might celebrate this final task, but for me it’s bittersweet. Please tell me I’m not the only one who feels this way? Am I the only one on the planet still sending my high school kids off with a mom-made lunch? Don’t judge.
Luckily, I have one more child left at home and two more years of making delicious school lunches for him. These Melty Smoked Gouda, Mozzarella and Apple Pinwheels are going into his lunch rotation this year. They are perfection and will hold up well until it’s time to eat.

Who else loves this lunchbox? It’s perfectly compact and keeps everything in it’s own space, which I have found most kids like.

I chose to pair a tart apple with these smoked Gouda and mozzarella slices. If you’ve ever had smoked Gouda and a slice of green apple together, you’ll understand why I chose this pairing. Adding mozzarella helps balance each bite with its smooth and creamy taste. The taste is literally over the top.



Press the apples into your melted cheese. As you roll up the tortilla, the cheese will ooze and stretch, just like any other dairy-based cheese product.

These sliced pinwheels are ready for a lunchbox. Hopefully you’ll have a few slices left for your lunch too.

I chose to toast my tortilla wrap in the same pan I sautéed my apples. The crunch and texture it provides is a nice touch.
However, if you prefer, you can easily place the tortilla and slices in the microwave on a large plate for the same great melting effect. You’ll just be missing out on a little added crunch. It’s totally up to you.

I have a feeling these pinwheel slices are going to be part of my lunch rotation as well. It’s the perfect bite wouldn’t you say?

How many slices of these yummy pinwheels can you eat? I would serve a younger child 2-3 and an older child 4-6 depending on their hunger level, taking into consideration what else is in their lunch box.
