These lemon muffins with lime-scented sugar are soft, citrusy, and packed with fresh flavor in every bite. The lemony batter and zesty lime sugar topping make a combo that’s anything but boring.

Why These Lemon Muffins with Lime-Scented Sugar Don’t Need a Glaze to Stand Out
These lemon muffins with lime-scented sugar are bright, buttery, and full of bold citrus flavor. The combo of minced lemon in the batter and lime sugar on top makes them stand out from the usual muffin lineup.
The muffins get their lemon flavor from two sources: lemon-flavored Greek yogurt and a whole minced lemon (rind and all). Pulsing the lemon in a food processor adds intense citrus flavor without needing lemon extract. The batter itself is simple, just cream the butter and sugar, then alternate in the dry ingredients and yogurt mixture until it’s all combined.
While the muffins bake, I put together the lime-scented sugar with lime zest and granulated sugar. Once the muffins are warm from the oven, brushing them with melted butter helps the sugar stick and gives them a crisp, flavorful coating. They’re fresh, citrusy, and easy to pull together whenever you’re in the mood for something bright.
Why I Love This Recipe
- The batter is simple but feels a little unexpected with the minced lemon folded in.
- They taste bakery-level without needing a glaze, icing, or crumble.
- The sugar coating holds up well, no melting or stickiness a few hours later.

Ingredients
Here are the ingredients you’ll need to get these lemon muffins in the oven:
- All-purpose flour – the base of the muffin batter and what gives them structure.
- Baking powder, baking soda, and salt – these work together to help the muffins rise and taste balanced.
- Ground nutmeg – just a little, but it adds a nice subtle warmth I really like with the citrus.
- Lemon-flavored Greek yogurt – keeps the muffins moist and adds a little tangy flavor that plays well with the lemon.
- Minced fresh lemon – goes right into the batter for bold lemon flavor. I use the whole lemon (rind and all-no seeds) and pulse it until it’s finely minced.
- Vanilla extract – just a splash to round everything out.
- Granulated sugar – used in the batter and again for the topping. It adds sweetness and gives that nice sugary crust at the end.
- Unsalted butter – used twice: first to cream with the sugar for a light batter, then melted and brushed on top so the lime sugar sticks.
- Egg – holds everything together and helps the muffins bake up soft and fluffy.
- Lime zest – gets pulsed with sugar to make a citrusy topping that’s really refreshing with the lemon muffins.

How to Make Lemon Muffins with Lime-Scented Sugar
Find the complete recipe with measurements in the printable recipe card at the bottom of the post.
- Step One (prep your muffin tin and oven):
Preheat your oven to 350°F. Give your muffin tray a good coat of nonstick spray so nothing sticks later. - Step Two (mix the dry stuff):
Grab a bowl and whisk together the flour, baking powder, salt, baking soda, and a pinch of ground nutmeg. Set that aside for now. - Step Three (prep the lemon and mix the wet ingredients):
To mince a lemon, cut the whole fruit—rind and all—into chunks, pull out the seeds, and pulse it in a food processor until the texture looks like oatmeal.
Then, in a small cup or bowl with a pour spout, stir together the lemon-flavored yogurt, the minced lemon, and vanilla extract. - Step Four (cream the butter and sugar):
In a large bowl, beat the butter and granulated sugar with an electric mixer until it’s light and fluffy; this takes about 4–5 minutes. Add the egg and mix it in well. - Step Five (bring it all together):
Now you’re going to alternate adding the dry and wet mixtures to the creamed butter. Start with some flour, then add some yogurt mixture, and keep going, ending with the last bit of flour. Don’t overmix! Just blend each addition in until it looks combined. A stand mixer makes this easier if you’ve got one. - Step Six (fill and bake):
Spoon the batter into the muffin tray, filling each cup about three-quarters full. Bake for 20–25 minutes, or until a toothpick poked in the center comes out clean. Let them cool in the pan for a few minutes. - Step Seven (make the lime sugar):
While the muffins bake, toss 1/4 cup sugar and the zest of one lime into a food processor. Pulse it a few times until the lime is chopped up and the sugar smells nice and citrusy. - Step Eight (finish the muffins):
While the muffins are still warm, brush them all over with melted butter. Then roll each one in the lime sugar to coat.

Recipe Tips
A few simple tips to help you get the most out of these citrusy muffins:
- You can also make 12 mini muffins instead of 6 standard ones – just keep an eye on the bake time; they’ll be done a bit quicker.
- If your lemon has a thick rind, you might want to trim it down before pulsing. Too much pith can make the flavor a little bitter.
- A stand mixer helps keep the batter smooth without overmixing, but a hand mixer works fine – just go slow once the flour goes in.
- Don’t skip the melted butter before the sugar coating – it helps the lime sugar stick and adds just the right amount of richness.

Storage and Freezing
If you’ve got leftovers, here’s how to keep your lemon muffins with lime-scented sugar tasting fresh:
- Store cooled muffins in an airtight container at room temperature for up to 2 days. After that, they start to lose their texture.
- You can freeze them too – just skip the sugar coating before freezing and add it after reheating for the best texture.
- To freeze, wrap each muffin individually in plastic wrap and stash in a freezer bag. Thaw at room temp or warm in the oven before adding the lime sugar.

Frequently Asked Questions
- Can I use plain yogurt instead of lemon-flavored?
Yes, but you’ll lose a good portion of the citrus flavor. You can add a bit of extra minced lemon or a little lemon zest to help make up for it. - Do I have to use a food processor to mince the lemon?
It’s definitely the easiest way to get the right texture. You want the lemon finely chopped – rind and all – so it blends smoothly into the batter. - Can I skip the lime sugar topping?
You could, but it’s one of eth best parts. It adds a little crunch and a pop of flavor that makes these muffins stand out. It would like leaving off the orange glaze in my orange knot rolls. Still good, but no the same. - How do I know if my lemon rind is too thick?
If it feels unusually bulky or pithy when you cut into it, trim it down a bit before pulsing. Too much white pith can make the muffins taste bitter. - Can I make the lime-scented sugar ahead of time?
Yes, but it’s best used the same day. The zest can start to dry out or clump if it sits too long. - What’s the texture of these muffins like?
They’re soft and moist with just a bit of texture from the minced lemon. The sugar coating adds a light crunch around the edges. - Is it okay to use salted butter?
If that’s what you have, just skip the added salt in the dry ingredients to keep the balance right.
