This honey whole wheat sandwich bread is a total win in the kitchen. With no long rise times and your dough hook doing all the work, you can even sneak in some leisurely reading time. It’s so easy that even if you’ve never baked bread before, you won’t mess this one up.
What I love most is that if I use up all the bread at breakfast, I can whip up a new batch by lunchtime. Plus, the addition of vital wheat gluten makes the texture light and fluffy, perfect for toast and sandwiches.

- white whole wheat flour – This is one of my favorite bread flours—it’s got all the benefits of whole wheat but with a lighter texture. It’s perfect for a hearty yet soft loaf.
- yeast
- vital wheat gluten – This addition makes a big difference. It boosts the dough’s elasticity and gives the bread a nice, fluffy texture.
- water – Use filtered water if your tap water is not that great.
- canola oil
- honey – A touch of sweetness that also helps with the browning of the crust.
- fresh lemon juice
- salt
- egg white – Gives the crust a beautiful golden sheen and adds a bit of protein to the mix. It’s the finishing touch that makes the bread look and taste great.
- cooking spray
How to Make Honey Whole Wheat Sandwich Bread

- Step One: In the bowl of my stand mixer, I combine 3 cups of white whole wheat flour, yeast (I use active dry), and vital wheat gluten. I add water (no hotter than 110°F) and mix it all together. I let it sit for 10 minutes to let the yeast work its magic.
- Step Two: In a small bowl, I mix canola oil, honey, lemon juice, and salt. I then add this oil-honey mixture to the flour mix and combine everything. Gradually, I mix in the remaining 3 1/2 to 4 cups of flour (starting with 3 1/2 cups and adding more if the dough feels too wet) and knead with the dough hook for 10 minutes. If I’m kneading by hand, I’ll do it for 20 minutes.
- Step Three: When the dough is ready, I divide it evenly into two loaves and place them in two 9×5-inch loaf pans that I’ve sprayed with cooking spray. I cover them with a clean dish towel and let them rise for 30 minutes.
- Step Four: I brush the loaves with egg white and bake them in a 350°F oven for 30 minutes. Once baked, I let them cool on a wire rack and make sure they’re fully cooled before slicing.
