Sometimes the shape is the whole story. Turning red potatoes into little coins gives every surface a chance to crisp, soak up seasoning, and look downright happy on the sheet pan. It’s the kind of side that disappears without ceremony.
I had a bag of red potatoes on the counter the other night and felt like doing something other than the usual roast. Slicing them into coins means every edge gets attention and every piece is perfect. They taste as good as they look, and they hold their own next to anything you put on the table.

These are the potatoes I used…they sort of look like fingerlings.

Slice them up into coins.

Cheesy-Crushed Rosemary Roasted Red Potato Coins
Ingredients
- 3 lbs red potatoes, long in appearance like fingerlings
- 1 Tablespoon olive oil
- 2 teaspoons kosher salt
- 3/4 teaspoon crushed rosemary leaves
- 1/2 teaspoon coarse ground black pepper
- 3/4 cup blend Parmesan & Romano cheese, divided
- cooking spray
Directions
- Slice potatoes into coins and place in a large bowl. Toss with olive oil, salt, rosemary, pepper and 1/2 cup of the cheese.
- Place potatoes on a large (11 x 17) rimmed baking sheet that has been sprayed with baking spray. Place potatoes on tray and sprinkle with remaining 1/4 cup cheese.
- Place in a 450 degree oven and roast for 12 minutes. Carefully stir potatoes and roast another 12 minutes. Remove from oven and serve.

Aaahhh, roasted potatoes. I think I could live on roasted potatoes. I recently picked up a 5 pound bag of mixed color fingerlings at Costco and so this post was timed very well for me 🙂

Preheat the pan while you are heating the oven up- creates a nice crust on the potatoes!
