Home Fries Recipe
One of the marks that truly defines a fantastic batch of a breakfast potato side dish is the texture. They need to be starchy, creamy, crispy and crunchy.
My idea of really good home fries has been well-defined by a few diners I’ve patronized for years. They are hard to beat.
When it comes to making good home fries, stay away from waxy potatoes like red, fingerlings and new potatoes. Those varieties of potatoes work well in recipes where keeping their shape is important (think potato salad), unlike home fries. Waxy potatoes don’t break down the way starchy potatoes (Yukon Gold and Russets) do during the cooking process. Instead, a waxy potato holds on to its firm texture, never quite mastering that soft, creamy texture that make home fries so satisfying and delicious.

Pantry Ingredients
- olive oil
- table salt
- smoked paprika
- black pepper
Fresh Ingredients
- yellow potatoes – such as Yukon Gold
- yellow onion
- green bell pepper – or any other color bell pepper
- fresh garlic
- cilantro, parsley or scallion – your choice
How To Make Home Fries
Step one: Add the oil to a large cast-iron skillet over medium-high heat. Once hot, add the potatoes, spreading them out in an even layer, and turn the heat down to medium. Drape a piece of foil over the skillet (or place a lid slightly ajar on top) and cook the potatoes for 10 minutes. After 5 minutes, use a thin metal spatula to flip the potatoes.
Step two: After the potatoes have cooked for 10 minutes, add the onion and bell pepper and turn the heat down to medium-low. Drape apiece of foil over the skillet and cook for 5 minutes. Use a thin metal spatula to flip halfway through.
Step three: Stir in the garlic, salt, smoked paprika, and black pepper. Turn the heat down to low and cook (uncovered) for 3 minutes, stirring occasionally.
Step four: Remove from the heat and sprinkle cilantro, parsley, or sliced scallion on top.
Step five: Serve immediately for the crispiest results.

Recipe Tips
- For the potatoes you can use Yukon Gold or any type of yellow potatoes you like. There’s no need to peel them, just give them a scrub.
- Make sure to crush garlic with a garlic press.
- Best results with the crispiest edges occur when using a cast iron skillet.
- If you like your breakfast potatoes with a spicy kick, add 1-2 minced jalapenos along with the onion and bell pepper, or add half a teaspoon cayenne pepper along with the other spices.
