Fill that new lunchbox with these delicious Melty Smoked Gouda, Mozzarella and Apple Pinwheels. You will have a hard time believing this luscious tasting cheese is dairy-free!
It’s hard to believe we are dancing on the edge of summer. The sun is already waking up later and later and going to bed a little bit earlier every night. I know many of your kids have already returned to the classroom, but here in Oregon we still have until after Labor Day before we go back. I do love the month of August so I am fine that we don’t start back too early.
Now, let’s talk about back to school lunch. I still love packing a lunch for my boys, even though they are sixteen and eighteen years old. However, my eighteen year old son is off to college this fall so I will no longer be tasked with putting together a lunchtime meal for him. And you know what? I’m totally sad about it. Last May, the end of his senior year, I put a note is his lunch bag indicating this was going to be the last school lunch I ever packed for him. I know some might celebrate this final task, but for me it’s bittersweet. Please tell me I’m not the only one who feels this way? Am I the only one on the planet still sending my high school kids off with a mom-made lunch? Don’t judge.
Luckily, I have one more child left at home and two more years of making delicious school lunches for him. These Melty Smoked Gouda, Mozzarella and Apple Pinwheels are going into his lunch rotation this year. They are perfection and will hold up well until it’s time to eat.
Who else loves this lunchbox? It’s perfectly compact and keeps everything in it’s own space, which I have found most kids like.
Anyway, I want to talk about the smoked Gouda and mozzarella cheese I used in these pinwheels. I would never believe these slices are dairy-free if I was handed one of these pinwheels to eat. They have so much flavor and melt like real cheese. They are pretty incredible! I so wish these Daiya Slices would have been around when my oldest son was little. Dairy bothered his tummy so much. He was not allergic, but if he over-consumed dairy it was not good for him. Cheese like this would have definitely helped alleviate some of the struggles. I would have no hesitation putting this cheese on pizza, especially since it melts so nicely. You’ll have to try these slices out for yourself.
I chose to pair a tart apple with these smoked Gouda and mozzarella slices. If you’ve ever had smoked Gouda and a slice of green apple together, you’ll understand why I chose this pairing. Adding mozzarella helps balance each bite with its smooth and creamy taste. The taste is literally over the top.
Daiya Slices, as you see here, have an improved taste, texture and aroma. You can eat them cold or melt them as I do in these pinwheels. Again, they melt and stretch as good as dairy-based cheese and are a great source of calcium.
You shouldn’t have any trouble finding any of the Daiya products at your local market. They are available in more than 25,000 grocery stores in the United States, including Whole Foods, Kroger, Safeway and Publix, as well as most natural food retailers.
Daiya is the leading maker of cravable, plant-based comfort foods. You can feel good knowing their products are free of top food allergens like dairy, gluten, nuts and soy.
Press the apples into your melted Daiya Slices. As you roll up the tortilla, the cheese will ooze and stretch, just like any other dairy-based cheese product.
These sliced pinwheels are ready for a lunchbox. Hopefully you’ll have a few slices left for your lunch too.
I chose to toast my tortilla wrap in the same pan I sauteed my apples. The crunch and texture it provides is a nice touch. However, if you prefer, you can easily place the tortilla and slices in the microwave on a large plate for the same great melting effect. You’ll just be missing out on a little added crunch. It’s totally up to you.
I have a feeling these pinwheel slices are going to be part of my lunch rotation as well. It’s the perfect bite wouldn’t you say?
How many slices of these yummy pinwheels can you eat? I would serve a younger child 2-3 and an older child 4-6 depending on their hunger level, taking into consideration what else is in their lunch box.
Daiya also recently launched a few more delicious options that are perfect for lunch boxes or after-school snacking. They have burritos, frozen desserts and these dairy-free cheeze sticks, which are the first plant-based cheese stick on the market. The cheeze sticks are available in both cheddar and mozzarella.
Fill up that lunch box with more dairy-free treats. These No Bake Almond Butter Fudge Bars {Vegan, Dairy-free, Gluten free} are the perfect tasty bite. These Gluten Free-Dairy Free Raspberry Chocolate Chip Muffins are perfect for recess! You might also want to add these Banana Blueberry Muffins to your morning routine. My Strawberry-Banana Quinoa Smoothie, Minty Chocolate Avocado Shake and Pineapple Banana Smoothie can both easily stay cold in the thermos until lunchtime.
Three years ago on this day I made a batch of Pepperoni Pizza Pasta Salad for a party. It’s still one of my favorite dishes to bring to a potluck. Five years ago I made this Fancy Goat Cheese Crostini and we still enjoy it as often as possible. Have you ever made hummus at home, try it with these three recipes. Looking for an amazing treat this fall? This Upside Down Apple Pie is a family favorite. These Mini Apple Crumb Pies are pretty awesome too. If chocolate is on your mind, this Gooey Root Beer Chocolate Chip Cake is perfection.
