One of the things I've loved most about this Cheesy Taco Skillet recipe is its versatility. I have made it at least three different ways, based on what meat I have available and it was perfect every, single time.
I have used all ground beef as written in the recipe. I have also used half ground beef and half ground turkey as well as all ground turkey. It has been delicious each and every way. The seasoning has been perfect every time with each meat mixture. I have even added in a cup of cooked quinoa for an extra protein punch and it was also perfect. So many options!
You could easily put your skillet right on the table and have everyone dig in with corn chips or serve it in individual bowls. We have even scooped the mixture into warm tortillas. Either way it has been delicious and is on my monthly meal rotation from now until forever.

Cheesy Taco Skillet
Mexican Seasoning Blend:
- 4 Tablespoons (30 g) New Mexico chile powder
- 2 Tablespoons (14 g) smoked paprika
- 2 Tablespoons (14 g) ground cumin
- 1 Tablespoon (9 g) garlic powder
- 1 Tablespoon (7 g) onion powder
- 1 Tablespoon (3 g) dried oregano leaves
- 2 teaspoons ( 2 g) crushed red pepper flakes)
- 1 teaspoon cayenne pepper
- 2 lbs (908 g) lean ground beef (88% lean)
- 2 teaspoons (12 g) kosher salt, divided
- 1/4 cup (28 g) Mexican seasoning blend (recipe above)
- 1 (15 oz (425 g)) can reduced sodium black beans, rinsed and drained
- 1 (14.5 oz (410 g)) can fire-roasted tomatoes with garlic
- 1 (15.25 oz (427 g)) can niblet corn, rinsed and drained or 1 cup frozen corn
- 1/2 cup (120 ml) water
- 2 cups (240 g) freshly shredded Colby Jack cheese
- tortilla strips for serving (optional)
- chopped scallions, for serving (optional)
- For the seasoning blend, combine all ingredients in an airtight 8 ounce mason jar. Seal and shake until well mixed. Use as desired. Store in a cool, dry, dark place.
- Heat a 10-inch skillet (I used a 12-inch) over medium-high heat. When hot, add the ground beef and 1 teaspoon of the salt. Cook, stirring, until beef is cooked through. Drain any excess drippings if you have any. Sprinkle the seasoning and remaining 1 teaspoon of salt over the beef. Stir until the beef is completely coated with the seasoning. Add the black beans, tomatoes, corn and water. Stir to combine.
- Bring to a boil, until the water has mostly evaporated, about 3-5 minutes. Sprinkle the cheese on top and stir. Sprinkle with tortilla strips and scallions if desired.
