Avocado Caprese Bites

Avocado Caprese Bites the perfect afternoon snack
When it hits two and three o'clock in the afternoon, everyone at my house is looking for a snack, myself included. Something that is satisfying and can get you through to the dinner hour is what is requested most. What, no ice cream?

With summer tomatoes at their peak, California avocados in season and fresh basil multiplying overnight in the garden, these Avocado Caprese Bites are the answer to snack time at my house.

First of all, they are super CUTE! And since we eat with our eyes first that is important. They are also tasty, as in, you kind of can't stop eating them, so make enough for everyone. These are also a great party appetizer, serve them up at your next get-together.

But the most important reason to serve avocado as a snack is its superfood status. Avocados are loaded with healthy fats and nutrients such as oleic acid, lutein, folate, vitamin E, monounsaturated fats and glutathione. These can help protect your body from heart disease, cancer, degenerative eye and brain diseases. Have one every day and enjoy the benefits. They also taste amazing.

Disclosure: I have a working relationship with the California Avocado Commission and have been compensated with lots of beautiful avocados (the best part) and for my time to develop this recipe. However, as always I only work with brands I truly love. Please support them in any way you can so I may keep bringing you recipes like the one you see here. As always, all opinions are 100% my own.

This has to be one of those MOST creative and delicious ways I have seen to use avocado. I am adding 6 avocado’s to my grocery list… wait, make that a dozen! I have a feeling these will be pretty darn popular!

Love these! Any way to make ahead for a party, but keep the avocado from turning brown?
