  • 2 cups (~220 g) sliced, English cucumber
  • cup (~100 g) feta cheese crumbled
  • 1 tbsp. (15 ml) honey
  • 2 tbsps. (30 ml) fresh lime juice
  • tbsps. (22 ml) extra virgin olive oil
  • ¼ tsp. (1.5 g) table salt
  • 15 fresh mint leaves julienned

Instructions

  • Add the watermelon, cucumber, mint, and feta to a serving bowl. Gently toss until evenly combined.

  • In a small bowl, whisk together the honey, lime juice, olive oil, and salt until fully blended.

  • Pour the dressing over the salad and toss gently again to coat.
  • Serve immediately or refrigerate for a few hours. If making ahead, wait to add the mint until just before serving.
