Melty Smoked Gouda, Mozzarella and Apple Pinwheels
Fill that new lunchbox with these delicious Melty Smoked Gouda, Mozzarella and Apple Pinwheels. You will have a hard time believing this luscious tasting cheese is dairy-free!

3slicesDaiya Smoked Gouda
1(8 oz)Granny Smith apple, peeled, cored and diced
2tbspdairy-free buttery spread
Cover tortilla wrap with smoked Gouda and mozzarella slices. Set aside.
In a large, nonstick skillet, melt one tablespoon of buttery spread over medium heat. Saute diced apples until slightly softened; about 3 minutes. Remove from pan.
Add remaining tablespoon of buttery spread to the pan and swirl around until pan is covered. Place cheese covered tortilla in pan. Spread sauteed apples over the cheese; cover the pan for faster melting. Let sit over medium heat for 2 minutes.
Slide wrap out of the pan onto a cutting board. Gently press apples into the melted cheese. Carefully roll the tortilla up as tightly as you can. The wrap will be slightly crispy, but should still roll easily. Let sit for two minutes before slicing into pinwheels with a serrated knife.
Serve warm or room temperature. These will last nicely in a lunch box
You can also microwave the tortilla with the cheese on top, the cheese will melt perfectly. However, you will not have the crunchy outer edge of the tortilla when you make it this way.
