Summer Tomato Side Dish
It’s been a late summer around here, but the tomatoes are finally ripening and showing up at the farmer’s markets. I was starting to think it might never happen.
There’s nothing better than a fresh, juicy tomato, but when you sauté them with onions and a splash of white wine, they become something truly special. Each bite is bursting with flavor, making it a perfect addition to any meal. Don’t skip the capers—they really elevate the dish!

Late Summer Sautéed Tomatoes with Sweet & Savory Onions
Serves four
1 Tablespoon olive oil
4 shallots, sliced
1 small Vidalia sweet onion, sliced
2 pints grape tomatoes
Kosher salt and black pepper
1/2 cup dry white wine
2 Tablespoons capers
Heat your oil in a large skillet over medium-high heat. Add the onions and cook about 5 minutes, or until they are softened and showing a little browning on the edges.
Add the tomatoes, 1 teaspoon Kosher salt and 1/2 teaspoon black pepper. Stir the pan until four or five of the tomatoes began to burst open. This could take 3-5 minutes.
Add the wine and continue to cook until almost evaporated, another 5 minutes. Stir in the capers.
Serve slightly warm or room temperature.

Made this last night. I don’t have the wine, I used broth and forgot to buy the shallots. It was very good! Probably even better as posted. I went back later and had a couple of spoonfuls. It was calling my name.
