Bailey's Irish Cream Cake
Who does not need a Bailey's Irish Cream Cake for tomorrow? Trust me you do. If you are out of Baileys, run out and get some, it will be on sale this week.
Is this cake good? OMG. Yes.
Don't just save this for St. Paddy's Day...any day will work just fine.
When I saw it, I knew I had to have it. So I did.
You can have it too.
Let's make it together...
For the cake you will need: Pecans, yellow cake mix, instant vanilla pudding, eggs, water, vegetable oil and Irish Cream liqueur.
Start by greasing and flouring a 10-inch bundt pan. Sprinkle 1 cup chopped pecans over the bottom.
In a large bowl, with a mixer, combine yellow cake mix, vanilla instant pudding mix, 4 eggs, 1/4 cup water, 1/2 cup vegetable oil and 3/4 cup Irish Cream liqueur.
Pour batter over nuts in pan. Bake for 60 minutes in a 325 degree oven or until toothpick inserted in center of cake comes out clean.
Cool for 10 minutes in the pan.
Flip the cake out of the pan and cool completely on a wire rack.
While the cake is cooling, make the glaze.
Here's what you will need for the glaze: Butter, granulated sugar, water and Irish Cream liqueur.
Combine 1/2 cup butter, 1/4 cup water and 1 cup granulated sugar in a small saucepan. Bring to a boil and continue boiling for 5 minutes, stirring constantly. Remove from heat and add 1/4 cup Irish Cream liqueur.
Prick top and sides of cooled cake with a skewer.
Spoon glaze over top and brush onto sides of cake. Allow the cake to absorb the glaze and repeat until most of the glaze is used. Save some glaze to pour over sliced pieces. You'll be glad you did.
This cake will disappear fast.
It's so easy to make. How can you not do it?

LOL....I made ours on Friday night (same recipe) but added glaze to cake while still n the pan, covered with foil, and flipped cake every 12 hours until last night when we ate the WHOLE thing...we had some help, but this cake is so good...you should have it anytime of the year!!!

Sometimes I think you have a spy in my house, because you certainly know most of my favorite things ... like Bailey's, my "go to" drink. Pecans are high up there, too. I will have to figure out how to make this cake gluten free without a GF cake mix because I don't usually use them. While I am working today, I'll be pondering this challenge in the back of my mind!

Do you give the hooligans theirs with G rated glaze? Or do you just want them to sleep it off? (Only kidding). There's a lot to be said for adding a few extra ingredients to a box mix, and this cake says it all!

This cake looks simple and delicious! I'd make it if I only had some other people to share it with... I really don't think that my husband and I need to split this whole cake between ourselves. Perhaps I'll just have to make it at a later date. Irish Cream is good anytime - not just St Patty's day!

I made your Key Lime cupcakes and the Whiskey Glazed corned beef...and my day was glorious! But you know what? I left out two sticks of butter to soften and then added them both to the cupcake batter. Didn't realize I did it until the were in the oven and I went to make the icing! Yikes, a bit buttery, but they were real tasty though! I'd better go for a jog now...

Same recipe works with rum! However, my technique is to poke holes in the cake before releasing from the pan and get the glaze to soak in from the bottom.

I've never tried it so I'm not really sure but it might change the consistency too much to balance the other ingredients.
