Cut the lemon into chunks, including the rind, and remove the seeds. Place the chunks on the baking sheet and drizzle with olive oil.

In a small (oven-safe) ramekin, add the garlic cloves and cover them with ¼ cup of olive oil. Place the ramekin on the baking sheet with the lemon. Roast for 15 minutes.

In a food processor, combine the feta, cream cheese, the remaining 1/4 cup olive oil, honey, red pepper flakes, thyme, oregano, and the roasted lemon (rind included). Add the entire ramekin of roasted garlic and olive oil. Pulse until smooth, then blend until fully combined.
Transfer the dip to a serving dish and top with Kalamata olives, honey, fresh thyme, and red pepper flakes and sliced lemon. Serve with cucumbers, carrots, pita bread, or toasted baguette.
