  • Preheat the oven to 375°F.
  • In a bowl, combine the maple syrup, orange marmalade, vanilla extract, dried apples, dried apricots, golden raisins, and pitted dates.

  • In a large pot, simmer the sweet potatoes in water for about 15 minutes, until just tender. Drain.
    2 lbs. sweet potatoes, peeled, cut into 1/4″- thick slices
  • Add the fruit mixture to the drained sweet potatoes and stir to combine, lightly crushing the potatoes with a fork. Transfer to a 1 1/2-quart baking dish (7x10 or 9x9 inches).
  • In a food processor, pulse the flour, sugars, salt, and butter until crumbly. Toss in the pecans and pulse a few more times.

  • Sprinkle the streusel over the potatoes. Bake for 20 minutes, or until browned and bubbly.
