This spicy watermelon margarita recipe is made for batching. It blends watermelon juice, jalapeño simple syrup, lime, and reposado tequila into a refreshing summer drink that’s just the right mix of sweet, tart, and heat.
In a small saucepan, stir together the water, granulated sugar, and brown sugar. Add in the sliced jalapeño. Heat over medium-low heat, stirring often, until all of the sugar is dissolved, about 3–4 minutes.
½ cup (120 ml) water, ½ cup (100 g) granulated sugar, ½ cup (102 g) lightly packed light brown sugar, 1 jalapeño pepper
Remove from heat and allow the mixture to steep for 20 minutes. Strain into a jar or other container.
In a pitcher, add the watermelon juice, tequila, lime juice, and 6 tablespoons (90 ml) of the jalapeño simple syrup (save the rest for other cocktails). Stir to combine.
Place a few ice cubes in a glass and fill about ¾ full with margarita mixture.

Notes
*To get 3 cups (750 ml) of juice, you’ll need about 6 cups (900 g) of cubed seedless watermelon. Blend until smooth, then strain through a fine mesh sieve for best texture or use Simply Watermelon juice (store-bought) if you want a shortcut. Fresh is the best though.
The simple syrup gets its flavor from steeping sliced jalapeño—not blending—so the heat stays smooth and consistent.
Using both granulated and brown sugar gives the syrup a rounder flavor that works well with the watermelon and tequila.
Reposado tequila holds its own here—don’t swap in blanco or it’ll get lost.
Add lime sparkling water right before serving so it stays bubbly.
The margarita base (juice, tequila, lime, syrup) can be made a few hours ahead and chilled.
Leftover syrup keeps in the fridge for up to a week and works in other cocktails or lemonade.
