This refreshing Orange and Avocado Salad makes a colorful and flavorful lunch or dinner meal salad. I especially love this salad served as a side dish with a Mexican-inspired meal.
In a large bowl, add mandarin oranges, avocado and red onion. Stir in the orange juice mixture gently (you don't want to mush up the avocados). Cover and let chill 30 minutes while the flavors blend.
1 (11 oz.) can mandarin oranges in light syrup , 1 avocado, peeled and diced , 1/2 cup (1.5 oz.) thinly sliced red onion
Add lettuce to the chilled orange mixture and toss slightly.
3 cups lettuce greens (mix of romaine and spring mix)
