Instructions

  • Prepare the jalapeños while wearing gloves, then set them aside.
    16 whole jalapeños
  • Preheat the oven to 400°F.
  • In a large bowl, combine the cream cheese, mayo, half (6 oz.) of the Mexican cheese, chili powder, red pepper flakes, cumin, cayenne, salt, oregano, and black pepper. Use a hand mixer to blend until smooth.
2 (8 oz.) packages cream cheese, 1/4 cup mayonnaise, 12 oz. shredded Mexican cheese blend, 1 tbsp. chile powder, 1-1/2 tsps. red pepper flakes, 1/2 tsp. ground cumin, 1/2 tsp. cayenne pepper, 1/2 tsp. table salt, 1/4 tsp. oregano leaves, 1/4 tsp. coarse ground black pepper
  • In a large nonstick skillet, cook the ground turkey over medium heat until fully cooked and crumbled. Stir into the cream cheese mixture until well combined.
    1 lb. ground turkey (93/7)
  • Fill each jalapeño slice with a scoop of the cream cheese-turkey mixture, mounding slightly. Top with the remaining cheese.
  • Arrange the stuffed jalapeños on a large, rimmed baking sheet lined with aluminum foil for easy cleanup.
  • Bake for 25 minutes in the top third of the oven, or until the cheese is golden brown. Remove from the oven and serve immediately. For a more blistered look, put them under the broiler for a couple of minutes.
