  • In a large skillet or Dutch oven over medium heat, add the sliced onions, olive oil, butter, and salt. Cook, stirring occasionally, until the onions are deeply caramelized, about 25 to 35 minutes.

  • Add the minced garlic and cook for 30 seconds until fragrant.

  • Deglaze the pan with the white wine, scraping up any browned bits. Stir in the fresh thyme sprigs, Worcestershire sauce, and black pepper.

  • Pour in the beef broth and add the rigatoni. Bring to a boil, then cover and cook for 10 to 12 minutes, or until the pasta is al dente.

  • Remove the thyme sprigs. Stir in the grated Gruyere and heavy cream. Cook for another 1 to 2 minutes, until the cheese is melted and the sauce is creamy and thickened.
    7 oz. (198 g) Gruyere cheese, 1/4 cup (60 ml) heavy cream
