Wrap one strip of bacon around each spear in a spiral. Place them back on the pan with space between each.
16 strips (about 1 lb./454 g) of bacon
Bake for 20 to 25 minutes, or until bacon is crisp and browned.
Let cool a few minutes, then sprinkle Parmesan over the top and serve.
1/4 cup (25 g) Parmesan cheese
Notes
Use asparagus that’s about ½ inch thick—thinner spears overcook before the bacon crisps.
You can microwave the bacon for 30–45 seconds before wrapping to help it render and crisp more in the oven.
Freshly grated Parmesan melts better than pre-shredded cheese.
This dish is best served fresh and doesn’t freeze well after baking.
