Cut the potatoes into fries and place them in a large bowl of water. Let them soak for 30 minutes.
4 large (2.5 lbs.) russet potatoes
Preheat the oven to 375°F and line two large baking sheets with parchment paper. Set aside.
Drain the potatoes and rinse them under cold water. Dry thoroughly with paper towels. (Toss out any small or thin fries, as they’ll burn during cooking.)
Transfer the potatoes to a large mixing bowl and add the garlic olive oil. Toss to coat the fries evenly.
1/4 cup garlic flavored olive oil*
In a small bowl, combine the Parmesan cheese, salt, garlic powder, onion powder, black pepper, paprika, and dill. Add the seasoning mix to the fries and toss to coat.
1 tsp sea salt, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp ground black pepper, 1/4 tsp smoked paprika, 1/4 tsp dried dill , 1 tbsp. grated Parmesan cheese
Spread the fries in a single layer on the prepared baking sheets and bake for 20 minutes.
After 20 minutes, give the fries a good stir and rotate the baking sheets. Turn the oven up to 450°F and bake for another 20-25 minutes until they’re golden and crispy.
Sprinkle with fresh parsley. Serve warm with your favorite dipping sauce.
