Remove the chicken from its packaging and pat it dry. Place it on a large baking sheet lined with paper towels to absorb any excess moisture. Season both sides with salt and pepper. Let the chicken sit for 30 minutes so it’s not too cold when going into the air fryer.
3 lbs. boneless, skinless chicken thigh fillets, coarse ground black pepper, table salt
In a small bowl, combine coriander, cinnamon, cayenne, ginger, and nutmeg. Coat each piece of chicken with the spice mixture, then brush both sides with coconut oil.
Place four pieces of chicken in the air fryer basket, ensuring they don’t overlap (it's okay if they touch). Air fry at 390°F for 10 minutes. Remove the chicken from the basket and transfer it to an oven-safe dish, covering it tightly with foil to keep warm. Repeat with the remaining chicken.
