This simple beef burrito skillet recipe combines ground beef, corn, enchilada sauce and tortillas into a delicious one-pan meal. The flour tortillas soften during the cooking process and take on a pillowy-soft texture that helps make this dinner a slam dunk.
In a medium skillet, cook ground beef until there is no longer any pink showing; 7-9 minutes. After beef is cooked, drain fat completely and return beef to the pan.
To the beef add taco seasoning, water and enchilada sauce (make my homemade enchilada sauce if you like). Continue to cook over medium heat for 3-5 minutes until mixture begins to thicken.
Reduce to a low heat setting and add black beans, corn and tortilla strips. Cook for an additional 3-4 minutes, stirring gently.
Sprinkle the cheese over top of the dish and stir in just long enough for it to melt.
Remove from heat and serve immediately with any garnishes of your choice.
