Cut potatoes into fries and add to a large bowl of water. Allow to soak for 30 minutes.
Preheat oven to 375° F and line 2 large baking sheets with parchment paper. Set aside.
Drain potatoes and rinse them well under cold water. Dry thoroughly on paper towels. (Toss any extra small or thin fries as they will burn during cooking.)
Add potatoes to a large mixing bowl and toss thoroughly with garlic olive oil.
In a small mixing bowl combine salt, garlic powder, onion powder, black pepper, paprika and dill weed. Add to the fries and toss to coat.
Place French fries in a single layer on prepared baking sheets and bake for 20 minutes.
Stir fries well, rotate the baking sheets, and increase oven temperature to 450° F. Bake for another 20-25 minutes or until golden brown and crispy.
