3 lbs red-skinned potatoes 4 cups cold water 1/2 cup butter, room temperature 1 cup whole milk salt and pepper to taste garnish with fresh chives (optional)
Wash/scrub and cut potatoes into quarters. Place the potatoes into the pot of your instant pot and cover with water.
Place the lid on the instant pot and set it to manual for 10 minutes.
Manually release the pressure carefully after they are done cooking.
Drain the water from the instant pot.
Add butter and milk to the potatoes.
Mash the potatoes with a potato masher until they are as smooth as you desire.
Season the potatoes with salt and pepper and enjoy.
