Ingredients

  • 3 lbs red-skinned potatoes
  • 4 cups cold water
  • 1/2 cup butter, room temperature
  • 1 cup whole milk
  • salt and pepper to taste
  • garnish with fresh chives (optional)

Instructions

  • Wash/scrub and cut potatoes into quarters. Place the potatoes into the pot of your instant pot and cover with water.
  • Place the lid on the instant pot and set it to manual for 10 minutes.
  • Manually release the pressure carefully after they are done cooking.
  • Drain the water from the instant pot.
  • Add butter and milk to the potatoes.
  • Mash the potatoes with a potato masher until they are as smooth as you desire.
  • Season the potatoes with salt and pepper and enjoy.
