For the Mexican Salad:
2decently sized heads of romaine lettuce, chopped
3/4cupgrape tomatoes, halved
2cupscorn chips, crushed
1/2cupshredded cheddar cheese
1 can(15 oz)pinto or black beans, rinsed and drained
5green onions, chopped
For the Avocado Dressing:
1large (6-7 oz)avocado
2tbspsfresh lemon juice
1/4cupextra virgin olive oil
salt to taste*
For the dressing, combine all ingredients (except the salt) in a food processor or blender and process until smooth and creamy. Taste and add salt according to your taste. Cover and refrigerate until ready to serve. This can be made ahead several hours.
For the salad, combine all ingredients in a big serving bowl.
Toss salad with dressing right before serving.
*The amount of salt needed has to do with how large your avocado is and how much it will need or you prefer.
