Easy Pecan Pie Cobbler

Ingredients

  • 1 cup plus 2 tablespoons all-purpose flour
  • 3/4 cup granulated sugar
  • 3 tsps baking powder
  • 1/4 tsp salt
  • 2/3 cup whole milk
  • 1 tsp vanilla extract
  • 1/2 cup butter, cubed
  • 1-1/2 cups coarsely chopped pecans
  • 1 cup packed brown sugar
  • 3/4 cup Heath milk chocolate toffee bits (baking aisle)
  • 1-1/2 cups boiling water

Instructions

  • Preheat oven to 350 degrees F.
  • Whisk together flour, sugar, baking powder and salt. Stir in milk and vanilla until combined into a batter. Set aside.
  • (Start boiling water for use at the end.)
  • Add cubed butter to a 9 x 13 baking pan and place in the oven to melt and warm up the pan. (about 3-5 minutes)
  • Remove pan from oven and add batter. Sprinkle with pecans, brown sugar and toffee bits.
  • Slowly pour the boiling water over the top.
  • Bake uncovered until cobbler is set, about 30-35 minutes.
  • Remove from oven and place on a wire rack to cool for 30 minutes. The cobbler will thicken as it cools down.
