Orange and Avocado Salad

This refreshing Orange and Avocado Salad makes a colorful and flavorful lunch or dinner meal salad. I especially love this salad served as a side dish with a Mexican-inspired meal.

  • 1/4 cup fresh orange juice
  • 2 tbsps fresh lemon juice
  • 2 tsps avocado oil or extra virgin olive oil
  • 2 tsps sugar
  • 1/4 tsp kosher salt
  • 1 11 oz can mandarin oranges in light syrup, drained
  • 1 avocado, peeled and diced (whole avocado should weigh about 6.5 oz before peeling & dicing)
  • 1/2 cup (1.5 oz) thinly sliced red onion
  • 3 cups lettuce greens (mix of romaine and spring mix)


  • Add orange juice, lemon juice, oil, sugar and salt to a mason jar, shaking vigorously until combined.
  • In a large bowl, add mandarin oranges, avocado and red onion. Stir in the orange juice mixture gently (you don't want to mush up the avocados). Cover and let chill 30 minutes while the flavors blend.
  • Add lettuce to the chilled orange mixture and toss slightly.


This salad serves two people.
