Apple Crisp Filling:

  • In a medium bowl, toss together all apple filling ingredients and place them into the bottom of your crockpot.
    5 medium Granny Smith apples, cored, peeled and sliced, 1/2 cup granulated sugar, 2 tbsps. all-purpose flour, 1 tsp. ground cinnamon, 1 tsp. fresh lemon juice, 1 tsp. vanilla extract

Apple Crisp Topping:

  • In another bowl, mix together all topping ingredients, using a fork to mash the butter into the mixture until it becomes crumbly (you can also use your hands).
    1/2 cup rolled oats, 1/2 cup all-purpose flour, 3/4 cup light brown sugar, 1/2 cup cold unsalted butter, 1 tsp. ground cinnamon, 1/4 tsp. kosher salt
  • Sprinkle the crumble mixture evenly across the top of the apple filling in the crockpot.
  • Lay a generous sheet of paper towels across the crockpot (2 full size sheets or 3 half sheets -leave them connected to each other), ensuring full coverage without sagging down and touching the crisp. Place the lid on top and set crockpot to HIGH for 1 1/2 hours or LOW for 2 1/2 to 3 hours to achieve apple crisp perfection.*
  • Uncover and discard the paper towels and continue to cook for 1 more hour. Turn off heat or keep on warm and let the crisp cool down about 20 minutes before serving.
  • Serve as is or with scoops of vanilla ice cream.
