If you're looking for a simple and visually appealing dessert to serve at your upcoming celebrations, this fruit pizza with a brownie crust and cream cheese frosting, is one to consider. Think of this rich, pretty and decadent dessert as a much more fun version of a classic fruit tart.
Preheat oven according to package directions of the brownie mix. (I prefer 325 degrees F for brownies.)
In a medium bowl, add ingredients like water, oil/softened butter, egg...whatever your brownie mix asks for. Mix together with a wooden spoon or fork until the egg is fully incorporated. (Tip: I prefer to use softened butter (not melted), which will not fully mix together with the water and the egg, but it will incorporate once you put it together with the brownie mix. Using softened butter keeps the butter pieces whole and adds air to the batter, allowing for a light, fluffy and moist brownie. I also prefer the flavor butter adds and the cakier texture for this recipe.)
Add wet mixture to a large bowl with the brownie mix and combine with a wooden spoon until fully incorporated.
Spread batter evenly into your 9" tart pan with removeable bottom. Bake as directed on box, about 39-43 minutes.
Once time has been reached, center is set and edges have started to pull away from the pan, remove brownies from the oven. Do not over bake them.
Let brownies cool completely before removing from the pan.
In a medium bowl add cream cheese, heavy cream, confectioners' sugar and vanilla. Beat together until a fluffy, smooth consistency is reached. (Add another tablespoon of cream if you prefer a softer more pillowy frosting.)
Remove brownie cake from baking pan and place on a serving tray and spread frosting on top. Arrange desired fruit on top.
Can serve immediately, but it's best when chilled for at least an hour.
Brownie cake can be made the day before if necessary, just wait to frost until closer to serving time.
Cut brownie cake into wedges and serve. Keep any leftovers in the refrigerator.
