The Best Pumpkin Chili

Ingredients

  • 2 tbsps olive oil
  • 1 medium white onion, diced
  • 1 red bell pepper, diced
  • 1 (heaping) tbsp minced garlic
  • 2 lbs ground turkey, ground pork or ground beef
  • 1 cup chicken broth
  • 1 (28 oz) can of crushed tomatoes
  • 2 cups pumpkin puree
  • 1 tsp Tabasco
  • 1 (heaping) tbsp plus 1 teaspoon Better than Bouillon - chicken flavor*
  • 1 tsp chili powder
  • 1/4 cup fajita seasoning
  • 1 (15 oz) can black beans, rinsed and drained
  • salt and pepper to taste
  • garnish with sour cream, Monterey jack cheese and cilantro (optional)

Instructions

  • In a large nonstick skillet, over medium heat, add oil and sauté onions and bell pepper until tender; about 7 minutes. Add garlic and cook until fragrant; about 30 seconds. Transfer onion mixture to your Dutch oven or large soup pot.
  • In the same skillet, brown your ground turkey until it is no longer pink. Drain any fat, especially if you're using a higher fat ground meat.
  • Combine chicken broth, tomatoes, pumpkin puree, Tabasco, Better than Bouillon base, chili powder and fajita seasoning with the onion mixture in your Dutch oven. Add cooked turkey and black beans and bring to a simmer. Simmer together for 30 minutes to let the flavors come together.
  • Add salt and pepper to taste.
  • Garnish with any topping you choose.

Notes

Using Better Than Bullion Base - this is a brand name and you don't have to use it. You can also use bullion powder or dissolved cubes, however, Better Than Bullion Base does have a much better flavor than regular chicken bullion.
