So glad you liked it and I love hearing that you enjoyed it both ways. I haven’t tested this without strawberries, but I do think they play a big role in getting that volume. The sugar helps stabilize the egg whites, but the moisture and natural structure of the berries might be what helps it expand and hold. If you’re experimenting with other fruits, ones with similar water content and softness (like raspberries or ripe peaches) might have better luck. Let me know how it goes if you try again.]]></description>

It is airy and it is delicious right out of the freezer (no need to thaw). I tried making it with mango puree and that didn&#039;t work at all. It never became fluffy. Just remember to pull it out of the freezer about 15-30 minutes before you&#039;re ready to serve it!  I generally serve it with a tray of the mandatory chocolate or other macaroons or other small sweets and my guests always appreciate - and love - this light dessert.  And so pretty!   Be sure to put them in pretty glass sherbet or other bowls.]]></description>
