You caught me at a good time with about an hour before lunch! I like the way that the sauce would help to keep the moisture in the pork because there is so little fat on it and if you cooked it on it’s own it might have a tendency to dru out. The cider is a complete no-brainer when it comes to pork, marriage made in heaven as far as I am concerned!
