Since I only have one muffin pan, I had to make two batches.

For the first batch, I preheated the oven to 425 degrees and baked them for 5 minutes. I then dropped the temp to 350 degrees and baked for 8 minutes.

While the first batch was in the oven, the rest of the batter chilled in the fridge for about an hour before I used it. I baked the 2nd batch at 425 degrees for 5 minutes, dropped the temp to 350 degrees, and they were done in about 11 minutes.

While the first batch was great, the second batch is perfection. The muffins seem more moist and had a much better rise.

The only other change was topping each muffin with turbinado sugar instead of a streusel, since I wanted more crunch.

When I make them again, I will use the streusel listed in the recipe except I'll swap the granulated sugar for turbinado sugar.

Thank you!

These muffins are absolutely delicious! I used 2 cups of real pumpkin, which I roasted in my oven. Also, I reduced the butter in the streusel to 2 TBSP of butter, and 1/2 Cup of Brown sugar, The rest I kept the same.I put the butter in the freezer for about an hour and prepared the streusel after I had filled the muffin cups. I totally recommend this recipe. Bon appétit!

Good recipe! I need a little more spice with my pumpkin.
