I made this cake this last weekend. It was easy to make, and the tips are invaluable. My only problem was I thought the frosting was not thick enough. I followed the recipe, including refrigeration after the crumb coat, but when I added one cake on top of another the frosting kept coming out the sides. I just ended up putting most of it on top. One other thing is nobody knew it had pineapple in it. I’d leave bigger chunks next time. The cake got rave reviews anyway.

If you’re using pineapple rings just chop them no juice, same with tidbits, the recipe does not call for any reserved juice.
