Another use for my whoopee pan I got to make your lime corn cookies (which are amazing). I have used this pan for some of your other soft cookies as recommended. I think this recipe will be great. I love the Fluffy Pancakes from Cooks Illustrated but do not, do not, like to have to beat egg whites and fold them in. A short cut fluffy alternative is very welcome.

I had no idea you could cook pancakes in the oven, though I guess you don’t usually do that since they don’t get brown on both sides. But it’s surely a lot less work than cooking them in a pan – and I don’t have to worry about failing horribly at flipping them 🙂

Hi Karol-

So sorry you’re disappointed. I make from scratch pancakes all the time, but I’m often in a pinch and this is the easiest way to turn something not fully homemade into something fabulous. What makes them the fluffiest is the yogurt. Feel free to add it into your regular recipe and see if it works for you.
