I talk about this a bit in the post because I specifically chose not to blister or peel the poblanos for this recipe. I don’t find the skins tough after they’ve baked for 20–25 minutes, and leaving the peppers intact helps them stay firm enough to hold all that filling. I know some people prefer poblanos peeled, but for these, I much prefer them this way. There are a few more details in the post about why I don’t precook them that might be helpful too.]]></description>

					<description><![CDATA[I’ve always blistered them first, because then I can remove the skins. Do you find that not doing that, that’s the skins are tough? I find that poblano skins can be kinda tough, and annoying when eating. I can see your point about them being easier to work with though. Thanks]]></description>
